8 chicken drumsticks -- about 2 pounds
1 small onion
3 cloves garlic
16 ounces canned cannellini beans, canned white
kidney beans or canned pinto beans Salt Fresh ground pepper 1 tablespoon oil
2 tablespoons chili powder
1 pint cherry tomatoes
1/4 cup chopped fresh coriander leaves
GARNISHES - USE ANY OR ALL: Monterey jack cheese
grated Jalape?o chilies :

PREPARATION: Cut off the knobby drumstick joint and scrape around the bone to free tendons. Chop the onion. Mince the garlic. Drain and rinse the beans. Sprinkle the chick en with salt and pepper. Heat the oil in a 4-quart soup kettle or dutch oven. S aut

Hatch green chiles are in season, and I had to make a delicious stew. I used a mild hatch green chile and added a jalapeno to control the heat.
INGREDIENTS
7 Hatch Green Chiles
2 1/2 to 3 lbs of pork shoulder
3 medium-sized potatoes
1 cup of diced onion
1 jalapeno
1 tsp Mexican oregano
4 cloves garlic
2 tsp garlic powder
2 tsp onion powder
2 tsp ground cumin
4 cups chicken broth
4 oz crushed tomato (or 3 or 4 Roma tomatoes)
salt and pepper to taste

½ tablespoon olive oil
1 medium white onion, chopped
1 can mild green chiles (or sub 2 seeded and diced jalapenos)
1 tablespoon ground cumin
2 teaspoons chili powder

2 jalapeno peppers diced
1 small onion diced
2 tablespoons minced garlic
2 poblano peppers (roasted, or fresh)
2 cans white beans (drained - 16 ounce cans)
2 cups chicken stock
1 tablespoon olive oil
1 tablespoon ground cumin
1 tablespoon chili powder
1 tablespoon ancho powder
1 teaspoon cayenne
1 teaspoon oregano
salt and pepper to taste
2 tablespoons cornmeal
Hot Sauce to taste
FOR SERVING: Crumbly white cheese, spicy chili flakes, fresh chopped parsley

Crock-pot/slow cooker chicken chili verde. Hatch green chilies
Chicken, chlies, cilantro, garlic and pickled jalapenos.
8-10 hours on the low setting. Keto friendly recipe. Great recipe.

Recipe:
4 lbs chicken thighs
20 oz pickled jalapenos (with carrots/onions) and half the liquid
1 bunch cilantro leaves
3 cloves garlic
1-2 lbs fire roasted hatch green chilies (from trader joes)
Using blender or food processor puree the pickled jalapenos, garlic and cilantro. Add that, the chicken and chilies into the crock-pot/slow cooker. Cook on the low setting for 8-10 hours. Remove skin and bones, shred chicken. Serve with tortillas, rice, beans. Works great as burrito filling also. Enjoy
