:
FORMATTED BY LISA CRAWFORD---------------- 12 Uncooked corn tortillas
1 md Anaheim or poblano chili
-minced (or 2 4-oz cans -diced green chilies) 2 To 3 cups grated jack cheese
4 Eggs
2 c Buttermilk
Salt and pepper OPTIONAL ITEMS:
1 To 2 cups cooked pinto beans
1/2 lb Firm tofu thinly sliced
1 c Chopped onion, sauteed
1 To garlic cloves :
sauteed
-minced 1 sm Zucchini -- sliced and sauteed
ds Cumin, and dried bell pepper -or oregano
Preheat oven to 375 degrees F. Butter or oil a 2-quart casserole or a 9-by-13-inch pan. Tear 6
tortillas into bite size pieces and spread them evenly in the casserole. Spread half the chilies and half the cheese over the tortillas. (At this point, spread, sprinkle or place any optional items on top of the cheese) Tear the remaining tortillas and spread them on top. Follow with the remaining chilis and cheese. Beat the eggs and buttermilk together with salt and pepper to taste, and pour slowly over the casserole. Bake uncovered for 35 minutes. Serve hot, warm or at room temperature. If it is prepared ahead of time, the sauce may make the tortilla strips soggy.Ingredients...2 Cups fried tortilla strips4 Cups shredded cooked chicken1 Cups Green Tomatillo Sauce1 Cups shredded queso Chihuahua or Monterey Jack cheese1 Cup sour cream1. Preheat the oven to 350 degrees.2. Spread the tortilla strips over the bottom of a 9 by 13-Inch baking dish. Place the chicken on top and cover with the sauce. Scatter the cheese over the top. Cover with foil and bake for 20 minutes, or until heated through.3. Spread the sour cream over the top of the casserole, and serve.NOTE: To make fried tortilla strips, slice corn tortillas, homemade or store bought, into thin strips. Fry in a large skillet of hot oil until light golden brown and crisp; watch carefully so they do not burn. Remove with a slotted spoon and drain on paper towels.

Water
Oil
12 corn chips
10 tomatillos
1 poblano
2 serranos + 1 Jalapeño
1/2 onion
1/2 bunch cilantro + extra for topping
2 garlic cloves
1 1/2 cups warm water + 1 Tbsp chicken bouillon
Queso fresco + Mozzarella if you like the cheese pull : )
Mexican Crema fresca
Tips- If you have fresh chicken broth use that : )
-If you do no like spice omit the chiles
-If you love spice use 4 serranos +2 Jalapeños

2 tomatillos
2 Chile moritas
1 garlic clove
1/2 tsp oregano
1/2 tsp black pepper
1/4 tsp ground cumin
Salt I used 2 tsp
Water to blend I used 3 cups

Bake temp: 380 degrees (F) for 15 to 20 minutes
Ingredients
Oil
1 1/2 Tbs butter
8 eggs + 1/2 cup heavy whipping cream (salt pepper to taste)
8 oz of chorizo of choice + 2 medium potatoes
11 Corn tortillas
1/2 8oz can tomato sauce
3/4 cup water
2 tomatoes
2 medium Anaheim pepper or can of Hatch green chili
1/2 chopped white onion
2 garlic cloves
1 tsp chicken bouillon (salt pepper to taste)
1 can pinto beans
3 cups of cheese (mozzarella + Mexican cheese blend)
If you refrigerated your casserole for next day use
Bake at 350 degrees
Cover with foil and bake for 30 minutes- then remove foil and continue to bake for another 15 to 20 minutes, until you see all cheese has melted, you know the bubbling.
