How To make Chocolate a L'Orange Pie
8 oz Cream cheese; soften
14 oz Sweet. cond. milk
6 oz Choc. chips; semi-sweet
1/2 c Evap. milk; no dilute
3 oz Orange juice conc; thaw*
1 Chocolate crumb pie shell
= 9 inches Melt chocolate. Beat cream cheese in large mixer bowl. Gradually beat in sweetened condensed milk, then cooled, melted chocolate, then evaporated milk until until mixture is smooth. Add orange juice concentrate*; beat 1 minute on medium high speed. Pour into pie shell. Freeze. *Note: for added zing you can substitute an orange liqueur such as Cointreau, Grand Marnier or Triple Sec for the orange juice. The first two are expensive, so this rcp gives me an excuse to buy the G. Marnier and sample it while making the pie. -----

- 110g of sugar
- 20g of honey
- 200 ml of heavy cream
- 3 egg yolks
- 3 gelatine leaves
Chocolate mousse
- 45g of sugar
- 22ml of water
- 3 egg yolks
- 120g of chocolate 70%
- 200g of heavy cream
- 2 gelatine leaves
Cocoa crumble
- 30g of butter
- 135g of fine sugar
- 45g of plain flour
- 10g of cocoa powder

Chef tutor Helen Carey from our Kings Cross Cookery School shows us how to make a delicious chocolate orange tart from scratch.
This tart makes for a great, showstopper dessert with its classic flavour combination and delicate, crumbly pastry. This recipe has three key stages – a shortcrust pastry base, a zesty orange curd layer and a rich chocolate ganache topping. These are all great recipes and techniques to learn and add to your repertoire and versatile for a number of dishes.
Ingredients:
140g unsalted butter, 100g chilled and cubed
180g plain flour, plus extra for dusting
2 egg yolks
3 oranges
1 egg
150g golden caster sugar
½ tbsp cornflour
130g dark chocolate (70% cocoa), finely chopped
130ml double cream
flaky sea salt, for sprinkling

This easy orange cake melts in your mouth. It's very juicy and simply delicious! All who taste it can't help to repeat!
INGREDIENTS:
3 EGGS
SUGAR 180g (6.35oz)
OIL 150 ml (5.07 fl oz)
A GRATED ORANGE PEEL
ORANGE JUICE 450 ml (15.22 fl oz)
FLOUR 250g (8.8oz)
BAKING POWDER 15 g (0.5 oz)
