Here's another recipe from my Taste of Home Halloween party favorites book. They are like the Little Debbie oatmeal cream pies you see in the store except this one is a little crunchy and has chocolate filling. Once again, everyone who tried them really liked them. Let me know if you've made a filled cookie before or had one like this one and if you liked it.
Chocolaty Double Crunchers
Ingredients: 1/2 cup butter, softened 1/2 cup sugar 1/2 cup brown sugar 1 egg 1/2 teaspoon vanilla 1 cup flour 1/2 teaspoon baking soda 1/4 teaspoon salt 1 cup quick-cooking oats 1 cup crushed corn flakes 1/2 cup coconut FILLING: 2 packages (3 ounces each) cream cheese, softened 1 1/2 cups powdered sugar 2 cups chocolate chips
Directions: In a medium bowl, combine flour, baking soda and salt. In a large mixing bowl, cream butter and sugars. Add vanilla and egg and beat well. Slowly add the flour mixture. Add oats and coconut. Crush the corn flakes in a baggie and then add those to the mixture. Shape into 1 balls and place on greased cookie sheet. Flatten with a glass dipped in flour. (Wet bottom of glass with a finger dipped in water.) Bake at 350ºF for 8 - 10 minutes or until lightly browned. Cool for 2 minutes on cookie sheet and then remove to a wire rack to cool completely. FILLING Beat cream cheese and powdered sugar until smooth. Melt chocolate chips in the microwave for 1 minute. (If more time is needed go for 30 second increments.) Add melted chocolate to cream cheese mixture and blend well. Spread about 1 tablespoon of filling on 1 cookie and cover it with another cookie. Store in an airtight container in the refrigerator. Makes about 2 dozen cookies

Hot Cheetos Fried Mozzarella Cheese Sticks
Hot Cheetos fried cheese sticks are WAY better than normal cheese sticks!
Ingredients: Hot Cheetos crushed mozzarella cheese sticks cornmeal or flour egg (whisked) oil for frying
Instructions: Roll cheese stick in cornmeal (helps everything stick), then roll in egg, then roll in Cheetos. Repeat last 3 steps. Fry in 350-375 degree oil, about 30 seconds each side, or until lightly brown.

1/2 cup salted butter (see note) 1/2 cup brown sugar 1/2 cup white sugar 1 whole egg 1 1/4 cup all-purpose flour 1/2 teaspoon baking soda 1 cup chocolate chips 1/2 cup walnuts, coarsely chopped (optional)
Note: If using unsalted butter, add 1/4 teaspoon iodized salt into the flour mixture
