How To make Coco Nut Macadamia Pancakes
-MARY WILSON BWVB02B 3 c Flour
1/2 tb Salt
6 tb Sugar
1/2 tb Baking soda
1 tb Baking powder
1 pt Buttermilk
3 Eggs; beaten
4 tb Melted butter
1/2 pt Coco-Lopez (see note)
1/2 c Toasted coconut; shredded
1/2 c Toasted macadamia nuts;
- chopped 4 tb Vegetable oil
1 c Fresh pineapple; diced
12 oz Maple syrup
Sift the flour, salt, sugar, baking soda and baking powder into a large mixing bowl. In a separate bowl, whisk together buttermilk, eggs, melted butter and Coco-Lopez. Add wet ingredients to dry. Stir with a spoon to combine; batter will be slightly lumpy. Stir in coconut and macadamia nuts. Brush griddle with oil, and heat to 400 degrees. Drop batter onto griddle using a 4-ounce ladle. Cook about 3 minutes, until done on both sides. Serve garnish with pineapple, maple syrup, and butter. Note: Coco-Lopez is condensed coconut liquid available in liquor section of many markets. Macadamia Nut Pancakes Recipe
Ingredients:
1 cup all purpose flour
1 ½ tablespoon sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
1 egg
1 tablespoon butter, melted
⅓ cup Maika’i Macadamia Nuts, finely chopped
Directions:
1. Preheat a large skillet over medium low heat.
2. To a medium bowl, add flour, sugar, baking powder, baking soda, and salt. Mix until well combined.
3. To a small bowl add buttermilk, egg, and butter. Whisk until well combined.
4. Pour the wet ingredients into the dry and mix until just combined. Do not over mix the batter. Lumps in the batter are okay.
5. Lastly, add the macadamia nuts and mix until just incorporated.
6. Add butter or oil to the pan and scoop about ¼ cup of batter for each pancake. Cook for 2-4 minutes or until bubbles begin to develop on the top of the pancake. Flip and cook for another 2-3 minutes or until lightly browned. Remove from the pan and ENJOY!
