2 c All-purpose flour 1 ts Baking powder 1 ts Baking soda 1/2 ts Salt 1 c Oats; not instant 3 1/2 oz Dried coconut 3/4 c Vegetable shortening 3/4 c Sugar 1/2 c Packed light brown sugar 1 ts Vanilla extract 1 lg Egg Recipe by: Jo Anne Merrill 1. Sift flour, baking powder, baking soda and salt into a large bowl. Add the oats and coconut; set aside. 2. Cream shortening with both sugars until light and fluffy. Can use an electric mixer set at medium speed. Beat in vanilla and egg until well mixed. Gradually add flour mixture to make a stiff dough. 3. Drop by teaspoonfuls, 1 inch apart, on lightly greased cookie sheets. Bake in preheated 375-degree oven for 10 minutes or until golden brown. 4. Cool on cookie sheet for 5 minutes then remove to wire rack to cool completely. -----

How to make Jamaican Coconut Drops
SAFETY FIRST:
When breaking the coconut I keep it covered in a kitchen towel or plastic bag to prevent splinters from flying around. My hubby helped me break the coconut in the video, but if you have no help remember to watch your fingers because you have to really pound away with that hammer.
If you're very inexperienced please use gloves while handling the coconut or use a kitchen towel to hold it sturdily when removing the husk.
INGREDIENTS:
Recipe Yields 10 - 12 drops

St Vincent/Caribbean Coconut Drops/Rock Cake
Recipe 2 cups of sifted self rising flour- If you prefer to used all-purpose flour use 2 teaspoons of baking powder and 1/4 teaspoon salt. 1/2 cup of unsalted butter 1 cup of fresh grated coconut 1/2 cup of sugar 1 teaspoon cinnamon powder 1/2 teaspoon grated nutmeg- 1/4 or a pinch if you prefer 1 teaspoon vanilla extract 1/2 cup raisins About 4-5 tablespoons of coconut milk Mix well and bake at 350 degrees for 25-30 minutes As you know coconut has lots of moisture and tends to dry out bread products. Store in fridge and reheat.
