2 1/4 c Unbleached white flour 2/3 c Powdered sugar 8 oz Pecans (chopped) 8 oz Margarine (melted) 1 tb Oil (for baking sheets) 2/3 c Powdered sugar (for Coating cookies) Recipe by: Chachie's New Orleans Cooking Preheat oven to 350 degrees. In a large bowl, place flour, 2/3 cup powdered sugar, and pecans. Mix thoroughly. Add margarine and mix thoroughly with hands. Lightly oil 2 large baking sheets. In amounts of 1-1/2 tablespoons, mold dough into cocoon or oval shapes by hand. Place cookies on baking sheets. Bake in a 350 oven for 30 minutes or until bottoms are light brown. Do not overcook. When cookies are done, cool completely. Pour remaining 2/3 cup powdered sugar into a plastic bag. Drop 5 to 6 cookies at a time into the bag and toss. When cookies are completely covered with sugar, place on platter and serve. Yields 4 dozen. -----

Cooking at the Lake - Pecan Cocoons: (Annie Doodlebugs) The favorite part for the grandchildren is making the cocoons and rolling the in confectioners’ sugar! Recipe: 1 cup (2 sticks) Butter – soften ½ to 2/3 cup of confectioners’ sugar (10X Sugar) 1 to 1 ½ teaspoon of Vanilla extract (recommend- Madagascar Vanilla -William Sonoma or McCormick) Pinch or 1/8 teaspoon of salt 2 to 2 ¼ cups of sifted flour (recommend Cake Flour) 1 to 1 ½ cups of chopped pecans Directions: 1. Mix the butter, sugar and vanilla together until very creamy (like whipping cream texture). Add salt and flour (1/2 cup of flour at a time) mixing slowly. Then add the pecans. 2. Chill the batter for 2 hours or until the dough hardens somewhat. 3. Preheat the oven to 350°. 4. Form a small amount of the dough into finger-shaped cocoons or circle moons. Place each on a greased baking sheet and bake for 12 to 15 minutes or until light golden brown. 5. In a small pan add some confectioners’ sugar and while still warm, roll each cookie. 6. Very delicious treat and perfect for Christmas time. The recipe: 1 C butter 1/4 C powdered sugar 2 tsp vanilla Cream the butter, sugar, and vanilla together.
2 C all-purpose flour 1 C chopped pecans Mix the flour into the mixture until well blended and then add the pecans and mix well. Form into balls or rolls and bake at 300 until slightly browned. I ended up doing 300 for 30 minutes and 350 for 10 minutes. Ovens vary. Enjoy...
