How To make Coffee Pecan Muffins
1 3/4 c All-purpose flour
1/2 c Dk.brown sugar,firmly packed
1 tb Baking powder
1/4 ts Salt
3/4 c Milk
2 tb Instant coffee
1 ts Vanilla extract
1/2 c Unsalted butter, melted
1 lg Egg, lightly beaten
1 c Pecans, chopped
Preheat oven to 400 F. Grease 8 lg. muffin cups. In a large bowl, stir together flour, sugar, baking powder, and salt. In a medium-sized bowl, combine milk, instant coffee powder, vanilla extract, butter, and egg. Let stand for 5 minutes. Add mixture to flour mixture and mix "lightly". Fold in pecans. Spoon batter evenly into prepared muffin cups. Bake 20 minutes, or until a cake tester comes out clean. Remove muffin tin to wire rack. Filling:

1/4 teaspoon ground cinnamon
Icing:
3 cups powdered sugar
1 teaspoon vanilla
6 tablespoon sour cream

Welcome guys! Today I am making Pecan Pie Muffins. These Pecan Pie Muffins are a mix between a pie and a muffin. They have a muffin texture and a soft inside like a mini Southern pecan pie. You can either do regular size muffins or do the mini ones like I did in this recipe. These would go great with coffee or just as a quick little bite of goodness! Thanks for watching and take care.
INGREDIENTS:
1 cup packed Light Brown Sugar
½ cup all-purpose Flour
2 cups chopped Pecans
2/3 cup Butter, softened
2 Eggs, beaten
INSTRUCTIONS:
Preheat oven to 350 degrees. Grease mini or regular muffin cups generously.
In a medium bowl, stir together brown sugar, flour and pecans.
In a separate bowl, beat the butter and eggs together. Stir in dry ingredients just until combined.
Spoon batter into muffin cups about 2/3 full. Bake for 12-13 minutes for mini muffins or 15-17 minutes for regular size muffins. Run a knife around the edge of each muffin and pop it out and ENJOY!

Crumb Topping
⅓ cup all-purpose flour
2 tablespoons brown sugar, packed
1 tablespoon granulated sugar
½ teaspoon cinnamon
2 tablespoons butter, melted
Cinnamon Swirl
2 tablespoons granulated sugar
1 ½ teaspoons cinnamon
Vanilla Glaze
¼ cup powdered sugar
½ teaspoon vanilla extract
2 tablespoons cream (if using milk, use 1 tablespoon)
Preheat the oven to 375. Bake for 15-17 min. Yields 12 muffins.

Ingredients
Streusel
½ cup packed dark brown sugar
¼ cup all-purpose flour
1 tsp ground cinnamon
3 Tbsp unsalted butter, melted
¾ cup chopped pecans
Cake
2 cup all-purpose flour
1 Tbsp baking powder
1 tsp salt
½ tsp baking soda
¼ tsp ground allspice
½ cup unsalted butter, melted
1 ¼ cup sugar
1 ½ cup sour cream
2 large eggs
2 tsp vanilla extract
Directions
Streusel
1. Preheat the oven to 350 F and grease a 9-inch square pan.
2. For the streusel, combine the brown sugar, flour, and cinnamon and stir in the melted butter until evenly combined. Stir in the pecans and set aside.
Cake
1. For the cake, sift the flour, baking powder, salt, baking soda and allspice. In a separate bowl, whisk the melted butter, sugar, sour cream, eggs and vanilla. Stir this into the flour mixture until evenly blended. Spread half of the batter into the prepared pan and sprinkle half of the streusel on top. Use a skewer or paring knife to swirl the streusel in a bit. Top with the remaining batter, spread and then top the cake with the remaining streusel, giving the cake another little swirl.
2. Bake the cake for 45 to 55 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cake in the pan to room temperature before slicing.
3. The cake will keep, well wrapped and unrefrigerated for up to 3 days.

1 ¾ cup all-purpose flour
½ cup white sugar
½ cup brown sugar
1 teaspoon baking soda
¼ teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
¼ teaspoon cloves
¼ teaspoon allspice
1 cup cooked butternut squash, mashed
2 eggs
½ cup oil
¼ cup milk
1 teaspoon vanilla
½ cup pecans, chopped
Bake at 350F or 177C for 20 minutes.
