How To make Corn Sticks (Surullitos)
Ingredients
1 1/2
cup
water
1
cup
yellow cornmeal
1
vegetable oil for frying
1/2
teaspoon
salt
1
cup
freshly grated edam, gouda, or cheddar cheese
Directions:
Combine the water and salt in a saucepan and bring to a boil. Pour in cornmeal slowly but steadily, and stir until the mixture is thick and smooth. Remove from the heat and stir in the cheese. Mix well and cool.
Heat about 1/3 cup vegetable oil in a large, heavy skillet. Take small portions and shape into sticks 3 inches long and about 1 inch in diameter. Drop in the hot oil and fry until golden brown all around.
Drain on paper towel cover to keep warm. Yield: 18 corn sticks
Notes: These Puerto Rican snacks are served warm with a drink as a side dish along with meat or fish.

Hello my beautiful viewers! it's sorullito TIME!!! I've been meaning to share this recipe with you all for quite some time now and finally got around to it!! Sorullitos are definitely not an everyday thing, but they are such a delightful savory treat. I'm sure that there is some recipe out there that tells you how to make a healthier version that isn't fried, but to be 100% honest I do not think it'll be as good! just fry these babies up! like I said not every day but treat yo self every now and again! I hope you make these yummy thangs cause they are soooo GOOD!
Ingredients
2 C water
1 1/2 Tbsp vegan butter (margarine)
1 tsp salt
3 1/2-4 Tbsp cane sugar
1 1/4 C yellow cornmeal
1/2 C vegan cheddar-style cheese
2 C of unflavored oil for frying (I use Sunflower oil)
For mayo ketchup
1/2 C of vegan mayo
1/4 C of ketchup
1 clove of garlic(minced)
1-2 tsp of fresh lime juice
S+P (to taste)

This Puerto Rican recipe is really easy to prepare and is very versatile. Sorullitos de Maiz can be prepared with or with out the cheese to very flavor. They are great with a breakfast coffee then keep a couple for a lunch snack, but let's be honest they wont last because other people will just grab your stash lol.
Total Time: 20 minutes
Makes: 20 fritters
2 Cups of Water
1/2 tsp. Salt
1/4 Cup sugar
1-1/2 Cup Fine Cornmeal
4 oz. Gouda Cheese, Shredded
1. In medium sauce pan, bring water to a boil. Remove from heat and stir in salt, sugar, and cornmeal. Return to heat and cook fro 2 - 3 minutes, stirring constantly, until dough does not stick to the pot.
2. Remove from heat and stir in cheese. Let sit for 5 minutes, or until cool enough for you to handle them. Roll in to small cigar shapes.
3. In a large skillet heat 2 cups of oil to 375 degrees (or if using a deep fryer like me just set to 375), cook sorullitos 4-6 at a time, making sure not to crowd the pan until lightly golden brown.
That's it a super simple Puerto Rican appetizer for you!
