How To make Cossack Roast
Ingredients

pound
beef or horse roast, boneless
5
each
onions, chopped
1 1/2
teaspoon
salt
1
teaspoon
cloves, ground
1
teaspoon
cinnamon, ground
1/2
teaspoon
nutmeg, ground
1/2
cup
cider vinegar
1
each
garlic clove, minced
2
tablespoon
butter
4
tablespoon
yogurt plain
2
cup
cabbage, shredded
2
each
turnips, diced
4
each
carrots, diced
1
pepper, freshly ground
1/2
cup
raisins
1/2
cup
apple cider
1 1/2
cup
water
Directions:
Place meat in a deep roaster. Mix spices with the 2 chopped onions and garlic. Cover meat with this mix. Pour vinegar over the meat. Cover and refrigerate for 24 hours. Turn the meat at 12 hours.
Preheat oven to 275 degrees. Pour off the liquid and reserve it. Place meat back into roaster. Add 1/2 cup of the vinegar mixture, the cider, water, & raisins. Cover and cook for 2.5 hours.
Melt the butter in a skillet add the carrots, turnips, remaining 3 chopped onions & cabbage and cook until slightly browned. Spread the vegetables over the meat and roast for 1/2 hour. Remove the roast from the roaster and slice. Skim fat from liquid in pan and serve the vegetables with the liquid.

Кулеш (по украински Куліш) - это очень простое в приготовлении блюдо украинской национальной кухни, которое было очень популярно у запорожских казаков и было их основным блюдом по время боевых походов. Отсюда и второе название кулеша - полевая или походная каша. Кулеш очень просто и быстро готовить, а в его состав входят не дорогие и очень простые ингредиенты. В основе кулеша лежит пшено, картофель, зажарка из сала с луком и зелень. По возможности казаки добавляли в кулеш птицу или мясо, грибы или рыбу. Но в случае их отсутствия обходились пшеном и салом с луком. Даже в таком скромном варианте кулеш был вкусным и очень сытным блюдом, которое сочетало в себе одновременно и первое и второе блюдо. Отсюда и еще одно название кулеша - суп-каша.
Мой рецепт полевого кулеша прост, а вместо мяса я использую говяжью (предпочтительно) или свиную тушенку. Такой кулеш хорошо готовить на природе, во время походов, путешествий дикарем с полаткой, выездов на рыбалку, да и просто на даче и где угодно. В случае с тушенко все ингредиенты вашего блюда хорошо хранить и требуют наличия холодильника и т.д., что в походных условиях очень важно. Такой кулеш ничем не хуже кулеша например с курицей или мясом, а возможно даже намного вкуснее.
Так что обязательно приготовьте это блюдо и вы порадуете не только себя, но и всех ваших друзей и близких.
Для приготовления 6л кулеша вам понадобится:
Пшено - 500-600г
Картофель - 600-700г
Тушенка говяжья - 2 банки
Лук репчатый - 2шт.
Сало соленое - 100-150г
Петрушка, укроп
Соль - 2ст.л.
Вода - 5л
Доведите воду до кипения. Добавьте нарезанную кубиками картошку, варите 10-15 минут до полуготовности. Затем добавьте предварительно промытое пшено и измельченную тушенку. Перемешайте. Варите на умеренном огне еще 15-20 минут до полной готовности пшена, пока оно не разварится. На сковороде поджарьте нарезанное кубиками сало, добавьте мелко резаный лук и жарьте до золотистого цвета. Добавьте в кулеш зажарку и мелко резанную зелень. Снимите с огня и оставьте на 15-20 минут, чтобы кулеш настоялся.
