Ingredients:
1½ cups (260g) quinoa
3 cups (720ml) water
1 carrot
1 zucchini
1 onion
2 garlic cloves, crushed
1/4 bunch parsley
4 eggs, beaten
1/2 teaspoon + 1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons + 3 tablespoons olive oil
Directions:
1. Rinse the quinoa under cool water, until the water comes out transparent. Put rinsed quinoa in a medium saucepan. Add water, 1/2 teaspoon salt and bring to a boil over high heat. Reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Let cool. Transfer to a large bowl.
2. Finely chop the onion, grate zucchini and carrot. Chop fresh parsley.
3. Heat olive oil in a pan over medium heat. Add chopped onion and sauté for 3-4 minutes. Add crushed garlic, grated zucchini and carrot. Cook over medium heat, stirring occasionally for 7-8 minutes.
4. To the bowl with cooked quinoa and the cooked vegetables, 1/2 tsp salt, black pepper and chopped parsley. Mix until well combined.
5. With your hands, shape patties from the mixture.
6. In a large pan with olive oil. Fry the patties for 3-4 minutes on each side or until golden brown. Transfer to a paper towel.

Chicken Patties Recipe (котлетки):
-2 lbs (1 kg) lean Ground Chicken
-1 lbs (500g) White Bread (sourdough if avail.)
-1 to 1 1/2 cups Reduced Fat Milk / Whole Milk
-2 large Eggs
-salt, pepper, garlic powder, onion powder, paprika
-Remove crust from the bread and break it apart, pour milk over it and mash it until it's a fall apart consistency. Add ground chicken, a thin layer or to taste salt, pepper, paprika, garlic and onion powder, 2 eggs and mix everything until a smooth blended consistency achieved.
-Warm 1 tbs of oil in a large frying pan. Using water in between each patty to wet your hands so the meat doesn't stick to your fingers, make patties any shape you wish and add them to the pan. Fry covered on a medium setting on each side for about 4-5 minutes dependent on the thickness. I like to wash the pan in between the batches and adding new oil to prevent any tar on the next batch, but you don't have to :) Enjoy your Russian style patties ♥

-1 cup of Couscous (or less as it'll double in size)
-cubed or split fresh Tomatoes (amount to your taste)
-hand full of Basil (chopped)
-2 cups (or to your taste) baby Spinach
-Feta cheese
-2 tsp Basil Pesto or any of your favorite salad dressings
-Prepare couscous according to instructions, chop basil, cut tomatoes and spinach if needed. Add all ingredients together, mix and let chill in fridge. Bon appetite :) ♥

Lamb and Couscous Patties with Roasted Sweet Potatoes
What about a new recipe low in calories? One that is pretty low on carbohydrates, too. As side-dish, we’ve used 2 sweet potatoes cut into sticks which went into the oven for 35 minutes. For the lamb patties, we enhanced the mince with couscous, spring onion, and carrot. If you're not avoiding dairy products, it is best for you to serve these with a yogurt sauce.

Couscous Fritters
Ingredients
Couscous - 3/4 cup
Chopped Onion - 1 no
Salt
Chopped Green Chili - 1 no
Red Chili powder - 1/2 tsp
Eggs - 2 no
Chicken stock - 1/2 cube
Chopped Ginger - 1 small
Chopped Coriander leaves
Chopped Mint leaves
Water - 3/4 cup

Method:
1.To prepare the chicken stock: Heat water, drop the chicken cube, to this add ½ tsp chilli powder, once all this is dissolved, turn off the stove and drop in the couscous, mix it gently and let it sit for about 15 to 20 minutes. (The couscous soaks up all the stock)
2.Transfer the couscous to another bowl, to this add onions, mint leaves, green chillies, ginger, coriander leaves, and mix it well.
3.Beat eggs slightly and pour it into the mixture. Gently mix it together.
4.Take a deep pan. Pour enough oil to fry. Take a small portion of the mixture, roll it up and deep fry it. (Make sure oil is hot enough before frying)
Crunchy couscous fritters are ready to serve.
