How To make Cranapple Cake
2 1/2 c Unsifted all-purpose flour 1 c Light-brown sugar
firm pack 1 1/2 ts Baking soda 2 Large eggs - whites
1 ts Cinnamon 1/2 c Vegetable oil
1/2 ts Baking powder 1 c Frozen cranberries, halved
1/4 ts Salt 1 c Red cooking apple shredded
1 1/4 c Unsweetened applesauce
FROSTING:
2 tb Butter, softened 1/4 ts Vanilla
1 tb Milk 1 1/4 c Confectioners sugar
Heat oven to 325 grease and flour 10" tube pan In small bowl, combine flour, baking soda, cinnamon, baking powder and salt. In large bowl, with electric mixer, beat applesauce, brown sugar, egg whites and oil until well mixed. Beat in flour mixture until smooth. With rubber spatula, fold in cranberries and shredded apple. Pour batter into prepared pan. Bake 55 to 60 minutes or until cake tester inserted in center comes out clean. Cool
cake in pan on wire rack 10 minutes. Loosen edge; invert pan and unmold cake onto a wire rack; cool completely. Place cake on a serving plate. Prepare icing and drizzle over cake. Icing: In small bowl beat butter with milk and vanilla until welll mixed. Gradually beat in enough of 1-1/4 cups confectioners sugar until icing is smooth and spoonable. -----

INGREDIENTS
Filling
5 apples, diced
½ lemon, juiced
1½ cup cranberries
2 tablespoons cornstarch
3 tablespoons sugar
¼ cup maple syrup
1 teaspoon cinnamon
Topping
1 cup rolled oats
⅓ cup brown sugar
3 tablespoons flour
4 tablespoons butter
½ teaspoon salt
Ice cream
PREPARATION
1. Preheat oven to 350˚F/180˚C.
2. In a large bowl, gently combine apples, lemon juice, cranberries, cornstarch, sugar, syrup, and cinnamon.
3. Pour into a 9x13-inch baking dish and bake for 30 minutes.
4. In another bowl, combine oats, brown sugar, flour, butter, and salt until well-incorporated.
5. Sprinkle the oat topping evenly over the baked fruit and bake for another 15 minutes, or until the crust is golden brown.
6. Serve with ice cream on top.
7. Enjoy!

Never Fail Pie Crust:
2 T. butter
1 1/2 c. fresh cranberries
1 c. sugar
2 T. flour
3 T. cornstarch
1 t. cinnamon
1/2 t. nutmeg
1/4 t. allspice
2 t. orange zest
1/4 c. boiled cider or undiluted apple juice concentrate
8 c. thinly sliced baking apples (I used honeycrisp)
2 t. pure vanilla extract
1/3 c. coarsely chopped pecans or walnuts

This apple crisp has browned butter in the crisp topping, giving it a beautiful nutty aroma that complements the apples perfectly.
Yield: 6-8 servings
Prep Time: 20 minutes
Cook time: 45 minutes
Ingredients
6 cups (900 g) apples (such as Gala, MacIntosh or other sweet, eating apple), peeled and sliced
¼ cup (60 mL) maple syrup
1 tsp (5 mL) vanilla extract
½ cup (115 g) unsalted butter
1 ¼ cups (115 g) regular rolled oats
1/3 cup (50 g) whole wheat flour
½ cup (100 g) packed light brown sugar
1 tsp (5 mL) ground cinnamon
pinch salt
Directions
1. Preheat the oven to 350 F (180 C).
2. Place the sliced apples in a 6-cup (1.5L) by volume baking dish (any shape). Stir in the maple syrup and vanilla to coat the apples.
3. Melt the butter in a small saucepot over medium high heat until it browns and takes on a nutty aroma (once the foam subsides, it should be done). Set aside.
4. Stir the oats, flour, brown sugar, cinnamon and salt in a mixing bowl. Add the browned butter and stir until blended. Spread this evenly over the apples and bake for about 45 minutes, until the apples yield easily when a paring knife is inserted in the centre of the crisp (the crisp should be bubbling at the edges.) Allow the crisp to cool for 15 minutes before serving.

RECIPE
1 can of jellied cranberry sauce
1 apple, thinly sliced
1 box of cake mix, follow the directions to make the batter
handful of fresh cranberries (optional, but I would have done that if I had them to make the cake polka dotted!)
Spread the sauce over a greased cake pan until it evenly coats the bottom of the pan. Lay the apple slices down and cover with the prepared cake batter. If I would have had fresh cranberries, I would have dotted them in the batter. Bake at 350 until set (anywhere from 25-35 minutes depending on how deep your pan is.) Be sure your knife comes out clean when you insert it into the cake. Cool before turning upside down and serving.
