This will be the BEST crockpot chili you will ever make! 3 secret ingredients (brown sugar, Worcestershire sauce and beer) meld all the flavors together.

RECIPE:
INGREDIENTS:
2 lbs. ground beef browned and drained
1 large white onion diced
1 green bell pepper diced
3 Tbsp. chili powder
2 tsp. salt
½ tsp. pepper
1 tsp. onion powder
¼ tsp. cumin
1 Tbsp. Worcestershire sauce
1 Tbsp. brown sugar
1 cup beer use your favorite, I use coors light
29 oz. diced tomatoes or stewed tomatoes (two14.5-oz. cans)
15 oz. can tomato sauce
30 oz. pinto beans drained and rinsed (two 15-oz. cans)
1 beef bouillon cube
2 Tbsp. water
INSTRUCTIONS:
Add everything to the slow cooker, except the beef bouillon cube and the water.
Add the beef bouillon cube and water to a microwavable glass cup. Microwave for 40 seconds, or until the water is hot enough to melt the cube. Stir the cube in the water until dissolved. Add this to the other ingredients in the slow cooker, stir.
Cover and cook on LOW for 8 hours or HIGH for 4 hours without opening the lid during the cooking time.

INGREDIENTS
2 1/2 lbs beef chuck roast
2 lbs ground beef 85/15 meat-to-fat ratio
1 small to medium onion
4 guajillo peppers plus 1 cup soaking liquid
2 to 4 cloves garlic
2 to 2 1/2 cups beef stock or broth
12 fl oz bottle of dark lager beer
1/4 cup masa harina
1/4 cup light chili powder
2 Tbsp chopped chipotle peppers in adobo sauce
2 Tbsp dark brown sugar
1 1/2 Tbsp beef bouillon powder
1 Tbsp apple cider vinegar
1 Tbsp Maggi seasoning sauce
2 tsp ground cumin
1 tsp cracked black pepper
salt to taste
6 to 8-quart Slow Cooker
Cook on High for 4 to 5 hours or low for 7 to 8 hours

Slow Cooker Chili

Ingredients
3 tablespoons canola oil
2 pounds ground beef chuck, broken apart
Kosher salt
2 medium yellow onions, finely chopped
8 medium cloves garlic, minced
1 Fresno chile, halved, seeded, cut into 1/2 inch slices
1 red bell pepper, halved, seeded, cut into 1/2 inch slices
3 tablespoons tomato paste
1 (28 ounce) can whole, peeled tomatoes
2 tablespoons chili powder
1 bay leaf
1/2 teaspoon ground cumin
1/2 teaspoon allspice
2 teaspoons red pepper flakes
2 tablespoons apple cider vinegar
1 (15.5 ounce) can black beans, drained and rinsed
Optional garnishes:
Shredded cheddar
Sour cream
Sliced avocado
Thinly sliced scallions
Lime wedges
Tortilla chips
Directions
Special equipment: a slow cooker
Brown the meat: In a large saute pan heat 1 tablespoon of the oil over medium heat. When the oil begins to smoke lightly, add the beef and season with salt. Cook over medium heat, stirring with a wooden spoon, until the meat browns, about 5 minutes. Transfer beef to a large mixing bowl.
Brown the vegetables: In the same pan, stir in the onions and the remaining oil. Add the garlic, chiles, bell pepper, tomato paste, and a generous pinch of salt. Cook until the vegetables start to brown, about 5 minutes.
Cook the chili: While the vegetables are cooking, to the slow cooker add the tomatoes, chili powder, bay leaf, cumin, allspice, red pepper flakes, and 2 cups of water; stir to combine. Add the vegetables to the bowl of meat and stir to combine, then add to the slow cooker. Stir in the vinegar. Cover and set the cooker to low; cook for about 8 hours. Check after a couple of hours. Stir and taste for seasoning. Thirty minutes or so before serving, turn the slow cooker to high and stir in the black beans and cook for an additional 30 minutes.
Serve: Allow it to rest for about 15 minutes before serving. Stir in the scallions. Taste for seasoning. Serve with any or all of the following: cheddar, sour cream, avocado, scallions, lime wedges, and tortilla chips.

Purdue Chili Recipe
1lb. Italian Sausage 1 lb ground beef
28 oz can crushed tomatoes 14 oz can diced tomatoes (chili ready if you like)
1/2 cup chopped onion 1/2 tsp. salt
1 chili seasoning packet or 1 1/2 tsp. cumin and 1-2 tsp. chili powder
1 each: 15 oz can chili beans 15 oz can garbanzo beans 15 oz can black beans
1 tablespoon sugar and 1 tsp oregano leaves ( or 1/2 tsp dried oregano)
1/2 cup Heinz chili sauce
If sausage in casing, remove casing. Brown sausage, ground beef, and onion.
Drain. In slow cooker or Dutch oven, combine browned meat and all the other ingredients. If using slow cooker, cook on low for about four hours. If using Dutch oven, cook on low setting for two or three hours. Add water and stir to prevent sticking if using Dutch oven.
