How To make Curry of Beef Kenya
Ingredients

onion, sliced

teaspoon
curry powder

tablespoon
oil

teaspoon
salt

teaspoon
black pepper, ground
2
pound
beef, stew meat, cut in 1/2 inch cubes
2
cup
liquid, use beef broth, water and/or liquid drained from canned fruit, your choice
2
cup
fruit, use apples, pears, canned pineapple chunks, raisins or any fruit you prefer, cut into bite-size pieces
1
rice, hot, cooked
CONDIMENTS:
1
onions, green, chopped
1
coconut, grated, unsweetened
1
peanuts, chopped
1
chutney
Directions:
In a large Dutch oven, saute onion and curry powder in oil over medium heat until onion is soft. Remove onions from pan. Increase heat to medium-high and brown beef (in batches, if necessary). To the crock pot, add onions, beef, salt, pepper and liquid(s). Cover and cook on LOW for 6-8 hours.
About 1/2 hour before serving time, add fruit(s). You may thicken stew with cornstarch mixture, if liquid is too thin. Serve over hot rice with your choice of condiments.

INGREDIENTS:
Beef and marinade -:
* 3 lbs lamb shanks cut Into small bites
* 1/2 cup shallot onions Thinly sliced
* 1 habanero chili
* 1 tsp salt
* 1/2 tsp crushed black pepper
* 1/2 tsp all purpose seasoning (substitute with 1 bouillon cube)
* 1/4 tsp garlic paste
* 1/2 tsp ginger paste
REST OF INGREDIENTS:
* 2 tbsp Ghee
* 1/4 tsp aniseed
* 2 star anise
* 6 green cardamom pods
* 1 tbsp Tomato paste
* 1 tbsp curry powder
* 1 tbsp smoked or non smoked paprika
* 1 tbsp chili powder
* a pinch of garam masala
* 1/4 tsp garlic paste
* 1/2 tsp ginger paste
* 1/3 cup plain yoghurt (substitute with Same amount coconut cream or milk)
* 2 cups crispy fried shallot onions (Deep fry 4 cups of Thinly sliced shallot onions to obtain 2 cups)
* 2 cups of beef broth or plain water as braisig liquid
**cook on low heat to braise after adding the broth or water. Also, taste as you cook, and adjust salt to taste.**
