How To make Deep Plum Pie
12 to 16 halved and pitted blue plums
1/2 c brown sugar
1/2 c white sugar
1/4 tsp ground cloves or 1/2 teaspoon cardamon
pinch salt 2 tbsp quick-cooking tapioca
2 tbsp lemonjuice
1 tbsp butter
Pastry for one crust pie
Fill a 9 x 9 x 2 " baking dish about 3/4 full with the plums places cut side down. Combine the sugar, cloves or cardamon, salt and tapioca and sprinkle over the fruit. Shake the dish slightly so that the sugar will sift down through the fruit. Sprinkle with the lemon juice and dot with the butter. Bake at 375 degrees F for 20 minutes.
Roll the pastry and cut nine 3" circles from it. Remove the pie from the oven and place the circles of pastry over the fruit in a slightly overlapping design. Return the pie to the oven and bake for an additional 20 minutes or until the fruit is tender and the pastry brown. Serve warm or cold.

Blue Plum Almond Tart - Classic Tart Recipe - Almond Tart
Plums are super delicious and not only that, they contain a fair amount of important vitamins and minerals.
Also, for this recipe you can substitute plums for apricots or peaches, depending on a season.
Serves 2 and more
Ingrediens:
Depending on your baking dish, you will need 5-9 plums or apricots
100 gr. Gluten free flour OR all-purpose flour
100 gr.Almond flour
100 gr. Sugar
150 ml. Heavy Cream
3 Egg Yolks
Pinch of salt
Pure Almond Extract
Process:
Carefully wash and dry the plums along the diameter and pit the plums. Set aside
Preheat the oven at 350 F
Beat egg yolks and sugar for a few minutes and add the almond flour, gluten free flour, salt and heavy cream.
Add the almond extract and blend everything well for another 3 minutes.
Prepare your pie dish and line with parchment paper.
Gently spoon the almond batter into the pie dish and place the plums inside, skin up around the diameter.
Sprinkle with granulated sugar for a crispy crust and put in a preheated oven for 40-45 minutes.

Ingredients - Pie Dough
* 100 g all purpose flour**
* 100 g spelt flour**
* 70 g of butter
* 50 g ground walnuts - you can substitute with additional spelt flour if you do not have nuts
* 4 tbs of sugar
* 3 yolks
* about 2 spoons of water
** Alternatively you can use just 1 type of flour - all purpose flour or spelt flour. Then use 200 g of flour.
Knead all together and let it cool in fridge for 30 min.
Ingredients - Plum Pie Filling
* about 14 plums
* 3 spoons of sugar - I use brown sugar
* 60 g of butter
Cook plums for about 10 min
Topping with crushed nuts
* 40 g of ground walnuts/ or other nuts like cashew nuts are fine, alternatively you can skip the nut topping or make streusel. You can find the recipe and steps in the same blog
Preparation of baking plate
* 1-2 spoons of flour
* 10 g of butter
Roll out plum dough in a baking plate, add filling and sprinkle with crushed nuts and then bake pie in a hot-air oven at 170 degrees Celsius for 40 minutes.
