How To make Devonshire Splits
1/2 lb Stong white bread flour
1 ts Easy-blend yeast
1/2 ts Salt
1 tb Sugar
1 oz Butter; melted
1/4 pt Milk; warmed
TO FINISH:
Icing sugar Clotted cream Good jam Using a food-processor, a food mixer with a dough hook, or your hands, mix the dry ingredients, add the warm milk and melted butter and mix and knead to a smooth elastic dough. Cover with lightly oiled polythene and leave to rise until doubled in size - about 1 hour in a warm place. Knock back and knead again briefly. Divide the dough into eight and shape into small round buns. Space them well apart on a greased baking tray. Cover and set aside to prove (rise) until light and puffy - about 20 minutes. Bake at 425 F (220 C) gas mark 7 for 15-20 minutes until golden brown. Cool, then cut each bun down the middle, from top to bottom but not all the way through. Split open and fill with cream and jam. Be generous, allowing plenty of jam and no less than 1 oz clotted cream per bun. Then dust with icing sugar. Makes 8 buns. Source: Philippa Davenport in "Country Living" (British), March 1989. Devonshire splits: i paninetti dolci ripieni di crema che vi faranno perdere la testa!
I devonshire splits sono dei piccoli panini soffici e deliziosi che possono essere farciti come preferite. La ricetta, tipica della Gran Bretagna, prevede che siano serviti con marmellata di lamponi, panna e uno strato di zucchero a velo.
INGREDIENTI
250g di farina;
Un pizzico di sale;
2 cucchiai di zucchero;
5g di lievito fresco;
2 cucchiai di burro fuso;
150ml di latte caldo;
Marmellata, panna montata per servire.
PREPARAZIONE
Fate sciogliere lo zucchero e il lievito nel latte caldo e mettete da parte.
Unite alla farina lo zucchero, Il sale, il latte col lievito, il burro e mescolate.
Impastate e lasciate lievitare per 1 ora.
Tagliate l’impasto in 6 parti e formate delle palline.
Spennellatele con il latte e fatele cuocere nel forno a 200° per 10-15 minuti.
Quando sono pronti, farcite i panini con la marmellata e la panna montata. Decorate con lo zucchero a velo.

Devonshire splits: enjoy them filled with fresh cream and a little home made jam!
These little buns, split and filled with jam and cream make a great alternative to scones for afternoon tea!INGREDIENTS
250 g (8.8 oz) flour;
a pinch of salt; 2 tbsp sugar;
5 g (0.2 oz) fresh yeast;
2 tbsp melted butter;
150 ml (5 oz) warm milk;
jam, whipped cream for serving.
METHOD
Preheat oven to 200C/400F. Dissolve some sugar and fresh yeast in warm milk. Set aside for 10 minutes.
In a separate bowl combine dry ingredients: flour and sugar.
Pour yeast solution and melted butter into the dry mixture and stir to combine. Knead the dough with a stand mixer or by hand for 10 minutes. Cover with plastic and set aside for 1 hour. Cut the dough into 6 pieces and round each one into a ball.
Set balls aside, covered, for 15-20 minutes, brush with milk (optional) and bake for 10-15 minutes or until puffed and golden.
Set the buns aside to cool down, then make a slit 2/3 way through and fill each bun with cream and jam before serving.

Great British Bake Off Technical Week 3 - Devonshire Splits!
