How To make Diabetic Cotton Candy Cookies
3 Egg whites; beaten stiff
2 tb Granulated sugar replacement
Or granulated fructose 2 ts Orange oil
1 ts Orange rind
Beat sugar replacement, orange oil and rind into the stiff egg whites. Drop onto lightly greased cookie sheets. Bake at 325 F for 8-10 minutes. Remove from pan immediately. If you need some last minute Christmas treats for Christmas week, these are so quick and easy and you can use them for any kind of gathering! We love quick an easy holiday treats over here, ones that we can easily put together when we need something last minute. Merry Christmas!
What's included in these quick and easy Holiday Treats Video:
Christmas Crack
-35-40 saltine crackers
-1 cup butter
-1 cup brown sugar
-2 cups semi-sweet chocolate chips
-1/2 cup chopped pecans (optional)
Preheat oven to 400 degrees. Line a 10×15 inch baking sheet with aluminum foil and spray with cooking spray.
Place your saltine crackers in even rows.
In a saucepan over medium high heat melt the butter and brown sugar and whisk and let it boil for a few minutes.
Pour. over the. saltines and spread out and bake in the oven for 5 minutes. Remove from the oven and sprinkle with chocolate chips and let it sit.
Spread the chocolate over the Saltines and sprinkle with chopped pecans and let it harden. Cut into pieces and serve
Dipped Crackers
-48 ritz crackers
-3/4 cup creamy peanut butter
-16 ounces semi-sweet chocolate or white chocolate chips
Make peanut butter sandwiches with crackers. Melt the chocolate in a microwave safe bowl. Dip each cracker in the chocolate and place on parchment paper to let them harden.
Buckeyes
-1 cup peanut butter
-1 stick butter softened
-1/4 teaspoon almond extract (or vanilla)
-2 cups confectioners' sugar
-2 cups semisweet chocolate chips or chocolate bark melted
In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. Roll into 1 inch balls and place on a waxed paper.
Press a toothpick into the top of each ball and dip into melted chocolate.
Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Refrigerate until serving.

-Melting chocolate
Melt chocolate and pour peanuts into the melted chocolate. Take spoonfuls and place onto a parchment lined baking sheet and allow them to harden.

2 cups heavy whipping cream (whip until hardens with peaks)
ADD:
1/2 cup Splenda or sweetener of choice
12 oz can of evaporated milk
a few drops of cotton candy flavoring
MIX
ADD Food coloring
freeze for 4-6 hours

Sugar-Free Cotton Candy
I wouldn't have thought that such a thing could exist, but yes, it can.
It works to cut up sugar-free hard candies, and put them in a standard cotton-candy maker.
The result has a somewhat coarser texture than normal cotton candy, and if you try to eat it too fast, it collapses in your mouth back down into a hard lump. But if you eat it slowly, it is an entirely acceptable alternative to normal sugar-based cotton candy, for people like me with diabetes who must be careful about our sugar intake.
