HOW TO MAKE CHEWY KETO THIN MINT COOKIES
Okay… I know these aren’t a true thin mint cookie like the girl scouts sell, but these keto cookies remind me so much of them. These keto thin mint cookies are thick and chewy and very easy to make. And they are dairy free! They make the perfect Christmas cookie to make this year. Yes...I’m already thinking about Christmas.
I used a special raw cacao powder superfood blend called Cacao Bliss. It is already sweetened with monkfruit so we don’t have to add additional sweetener to this keto cookie recipe. This superfood cacao powder has MCT oils, cinnamon, turmeric, lucuma in it to help control blood sugar and keep you satisfied.

KETO THIN MINT COOKIES
5 oz dark chocolate (70% cacao or highter), melted
1/3 cup coconut oil
1 3/4 cups almond flour
1/4 cup Cacao Bliss or (100% unsweetened cocoa powder +1/4 cup monkfruit blend sweetener)
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 1/2 teaspoons peppermint extract
1 tablespoon sugar-free maple syrup
2 eggs
1/4 cup sugar-free chocolate chips
Preheat the oven to 350 degrees F. Using a microwave or a double boiler method, melt the dark chocolate at 30 second intervals or over low heat (respectively) until melted. Add in coconut oil and mix until smooth and combined. Set aside to cool.
In a medium bowl, combine the almond flour, Cacao Bliss or cocoa powder, baking soda, baking powder and salt.
Stir in vanilla and peppermint extracts and sugar-free maple syrup into the chocolate mixture. Mix well. Then add to the dry ingredients.
Mix in eggs and sugar-free chocolate chips until fully combined.
Scoop out a tablespoon of cookie dough and place on a parchment lined baking tray. Place cookie dough about 1 inch apart. Flatten down with the back of a spoon if desired. Bake at 350 degrees for 10 minutes.
Let cookies cool for 10 minutes on the baking tray after removing them from the oven. Then transfer to a wire rack.

Easy Vegan Girl Scout Thin Mint recipe gluten free plant based
Today we are making a copycat recipe of one of my favorite girl scout cookies. These thin mint cookies are vegan and can be made gluten free. They are quick and easy to make, but will look and taste like you have serious skills in the kitchen.

For Cookies:
3/4 cup (172g) unsalted vegan butter, softened to room temperature
½ cup (150 g) granulated sugar
1-1/2 tablespoons vegetable oil
1-1/2 tablespoons water
1 teaspoon baking powder
1 teaspoon pure vanilla extract
1/4 teaspoon peppermint extract
1 and 1/2 cups (188g) all-purpose flour (sub gluten free flour)
3/4 cup (63g) unsweetened natural cocoa powder
1/8 teaspoon salt
For Chocolate Coating
14 ounces (395g) semi-sweet chocolate, coarsely chopped
(Homemade chocolate Recipe:
1/2 teaspoon coconut oil
1/4 teaspoon peppermint extract
Pro tips
*If chilling for more than a couple hours, cover the top dough piece with a single piece of parchment paper. You can chill up to 2 days.
*To melt the chocolate you can use the microwave (carefully). Place the chocolate and oil in a medium heat-proof bowl. Melt in 15 second increments, stirring after each increment until completely melted and smooth.
*Make Ahead & Freezing Instructions: Cookies freeze well. Thaw overnight in the refrigerator if desired. You can chill the cookie dough for up to 2 days. You can also freeze the cookie dough. Allow to thaw in the fridge overnight before use. Then roll and continue with the recipe as directed.

TUESDAY TREAT

Recipe:
Ingredients
Chocolate:
⅓ cup cacao powder
⅓ cup coconut oil (melted)
3 tablespoons maple syrup
½ teaspoon vanilla extract
Mint filling:
2 tablespoons coconut butter
2 tablespoons coconut oil (melted)
¼ teaspoon mint flavour
Directions
In a medium bowl, combine all the chocolate ingredients. Mix until smooth.
Place 12 cupcake cases on a baking tray.
Pour ½ tablespoon of chocolate mixture into each of the cupcake cases.
Place in the freezer for 5 minutes.
In a small bowl, combine all the mint filling ingredients. Mix until smooth.
Pour 1 teaspoon of the mint mixture over each of the chocolate bases.
Place in the freezer for 5 minutes.
Top off with another ½ tablespoon of chocolate mixture .
Place in the freezer for 15 minutes.
Serve immediately or keep refrigerated.

Fatty liver disease means that you have fat deposits inside your liver. These deposits may keep your liver from doing a good job of removing toxins from your blood.
Obesity is the most common cause. Obesity in the U.S. has doubled in the last decade, and health care providers are seeing a steady rise in fatty liver disease. Although children and young adults can get fatty liver disease, it is most common in middle age.
The major functions of the liver include:
-Bile production: Bile helps the small intestine break down and absorb fats, cholesterol, and some vitamins. Bile consists of bile salts, cholesterol, bilirubin, electrolytes, and water.
-Absorbing and metabolizing bilirubin: Bilirubin is formed by the breakdown of hemoglobin. The iron released from hemoglobin is stored in the liver or bone marrow and used to make the next generation of blood cells.
-Supporting blood clots: Vitamin K is necessary for the creation of certain coagulants that help clot the blood. Bile is essential for vitamin K absorption and is created in the liver. If the liver does not produce enough bile, clotting factors cannot be produced.
-Fat metabolization: Bile breaks down fats and makes them easier to digest.
-Metabolizing carbohydrates: Carbohydrates are stored in the liver, where they are broken down into glucose and siphoned into the bloodstream to maintain normal glucose levels. They are stored as glycogen and released whenever a quick burst of energy is needed.
-Vitamin and mineral storage: The liver stores vitamins A, D, E, K, and B12. It keeps significant amounts of these vitamins stored. In some cases, several years’ worth of vitamins is held as a backup. The liver stores iron from hemoglobin in the form of ferritin, ready to make new red blood cells. The liver also stores and releases copper.
-Helps metabolize proteins: Bile helps break down proteins for digestion.
-Filters the blood: The liver filters and removes compounds from the body, including hormones, such as estrogen and aldosterone, and compounds from outside the body, including alcohol and other drugs.
-Immunological function: The liver is part of the mononuclear phagocyte system. It contains high numbers of Kupffer cells that are involved in immune activity. These cells destroy any disease-causing agents that might enter the liver through the gut.
-Production of albumin: Albumin is the most common protein in blood
serum. It transports fatty acids and steroid hormones to help maintain the correct pressure and prevent the leaking of blood vessels.
-Synthesis of angiotensinogen: This hormone raises blood pressure by narrowing the blood vessels when alerted by production of an enzyme called renin in the kidneys.
