1 cup pecans
1 1/2 cups Confectioners sugar
divided need 1/4 cup for recipe, rest for rolling
1 cup softened butter
1 t. vanilla, or almond extract
2 cups all purpose flour

My dear friend Anna D. usually hands me a tin of these MELT-IN-YOUR-MOUTH PECAN COOKIES at some point over the holidays. They have long been a favourite, and with the tiniest bit of coaxing, she agreed to share the recipe with on Weekend at the Cottage. Let’s hear it for Anna!

This recipe is especially fantastic because of the way the pecan cookies really do melt in your mouth. There’s something so dreamy about that perfect balance of ground pecans, butter and sugar. Safe to say, I’ve had my fair share over the years and these cookies never disappoint.
Here are a few tips on how to make our delectable MELT-IN-YOUR-MOUTH PECAN COOKIES:
READY SET
Can you believe we’re talking just six ingredients? Only one advance step: bring your butter to room temperature before you begin. I always place mine in a warm location the night before for an easy, soft start the following day. One thing of note is that all of our recipes at Weekend at the Cottage are crafted using unsalted butter.
NUTTINESS
This cookie is sometimes referred to as Meltaways and also Russian Tea Cookies. Although we’ve tried variations using both walnuts and almonds, we do like Anna’s version with pecans. They have a richness that blends perfectly with the butter, flour and sugar. It’s a subtle but wonderful flavour combination.
Another thing to mention about the nuts is the call for them to be ground. We used a little handheld grinder which worked perfectly. Processing the pecans in a food processor or chopping by hand will never achieve the required lightness of ground nuts. Remember to measure the pecans after they’ve been ground.
KEEP IT LIGHT
The direction to stir the flour and ground pecans together is a simple step, but it's important to do it lightly and gingerly. The goal is to create an even mix of flour and ground nuts that’s airy and blends perfectly with the sugar and vanilla-whipped butter. This will ensure your finished cookies stay together and don’t crumble away.
ROLL PLAY
Rolling the finished dough into ball shapes is an easy step, and if you have wee ones in your midst, corral them in to help. When rolling, stick with the idea of “less is more”. The quantity for each cookie is somewhere between a teaspoon and tablespoon, remembering that the cookies will swell a bit as they bake. Little cookie balls about 1-inch raw are the suggested size.
FINISHING TOUCH
The traditional big finish for these cookies is to roll them in confectioners’ (icing) sugar while they're still warm. This completes the sweet component of the recipe and gives the cookies that characteristic snowball look.
Although we love the snowball look, we also tried a more subtle approach where we dusted the cookies with the same sugar. Two different looks, same great taste; it’s your call!
COOKIE LOVE
Don’t be worried about the yield on this recipe. Although you’ll end up with five dozen cookies, trust me, you’ll have tons of takers. Better still, why not package them up in attractive boxes and give them to friends as gifts? I know they’ll love you and the cookies!

In this video I try out a recipe I have never tried. I thought it would be fun to try out a recipe together and review it. I do think this one needs twice the amount of Praline mixture, they turned out a little dry. The flavor was great!

Homemade Bisquick Recipe
3 cups all-purpose flour
1/2 tablespoon salt
1 1/2 tablespoons baking powder
1/2 stick cold butter or shortening
Put flour, baking powder and salt into a sifter. Sift into a bowl.
Cut in cold butter or shortening with a pastry cutter until evenly incorporated. Store in the refrigerator for up to 4 months.
No-Bake MINT CHOCOLATE MELTAWAYS - FANNIE MAY COPYCAT | Recipes.net
Sometimes, all you need is some minty magic for your chocolate treats. Try out these bite-sized mint chocolate meltaways just like Fannie May's! These small treats are molded in ice cube trays and dipped in a peppermint candy coating. Make sure to chill and allow them to firm up before indulging!

Ingredients:
16 oz unsalted butter, softened
12 oz milk or dark chocolate bars or chips, shaved if using bars
1⅓ cups powdered sugar
1 egg
1 tsp vanilla extract
¼ tsp salt
Green Chocolate Candy Coating:
12 oz white chocolate bars or chips, shaved if using bars
¼ tsp peppermint extract
Drops of green food coloring
1 tbsp coconut oil, plus more as needed
⬇️ How to make Copycat Fannie May Mint Chocolate Meltaways ⬇️
0:06 Prepare a pot with boiling water and place a heat-proof mixing bowl on top.
0:09 Add your milk or dark chocolates and egg and whisk for roughly 5 minutes until evenly melted. Ensure that the boiling water does not touch the bottom of the mixing bowl. Set aside.
0:28 In a mixing bowl attached to a hand beater, add the softened butter and sugar. Cream for roughly 5 to 7 minutes until the sugar has melted into the butter.
0:44 Add the vanilla extract and salt then continue creaming.
0:55 Fold the chocolate mixture into your butter mixture until evenly incorporated.
1:08 Using silicone ice cube trays, fill up your molds with the prepared chocolate mixture.
1:17 Scrape any excess with an offset spatula to smoothen the top of the molds.
1:25 Chill your chocolate cube molds for at least 4 hours, best if overnight, until the chocolate firms up. Unmould from your ice cube trays when firm and set aside in a chilled area.
1:28 Prepare your candy coating only when your chocolate cubes firm up. When ready, add all your candy coating ingredients into a heat-proof mixing bowl.
1:41 Place this on top of your pot with boiling water and whisk for roughly 5 minutes until evenly melted. Ensure that the boiling water does not touch the bottom of the mixing bowl.
1:46 You may also need to add more coconut oil to thin out your white chocolate mixture. The consistency of your coating should be similar to a free-flowing sauce.
1:53 Once you have achieved the desired consistency, set aside.
1:57 Add drops of green food coloring into your candy coating. Stir to combine and set aside.
2:06 Working quickly and using forks, dip your chocolate cubes into your candy coating until fully coated. Working quickly will avoid the coating from hardening. However, should it harden, quickly melt the coating again on top of a pot of boiling water.
2:13 Place these onto a cooling rack with a baking sheet underneath to catch any excess coating. Allow the coated chocolates to set at room temperature for at least 15 minutes.
2:16 Then, transfer to a chilled area for roughly an hour before serving.
2:23 Enjoy your Meltaways over hot tea or coffee. You can even melt your Meltaways into your hot tea or coffee for a sweet creamy beverage!
