How to make poached fish with tomatoes -
4 fillets of fleshy white fish (I used cod)
1/2 large white onion — finely diced
3 garlic cloves — minced
1 - 28 oz. (794 grams) can of crushed tomatoes
1 teaspoon dried oregano
2 teaspoons capers
3 teaspoons sliced Kalamata olives
1 lemon
Salt & Pepper
Oil
Heat some oil in a skillet and add the onion. Cook for about seven minutes — until it is soft and translucent. Stir occasionally.
Add the minced garlic. Cook for one to two minutes, until fragrant. Add the tomatoes and mix well, making sure to scrape the bottom of the skillet.
Add the oregano, capers and olives. Season with salt and pepper and mix.
Cover the skillet and cook for ten to fifteen minutes, until the tomatoes are cooked through.
Place the fish on a plate and drizzle with lemon juice. Season lightly with salt and pepper. Flip and repeat on the other side.
Place the fish into the skillet and cover with the tomato sauce. Cover the pan and cook for about eight minutes.
Serve the fish with the sauce over rice or pasta. Enjoy!

4 6 ounces cod fillet
1 tablespoon olive oil
1 small onion chopped
3 garlic cloves minced
28 ounces can crushed or diced tomatoes
1 teaspoon salt divided
½ teaspoon black pepper divided
½ teaspoon dried oregano
¼ teaspoon crushed red pepper
¼ cup black olives pitted
2 tablespoons capers drained
INSTRUCTIONS
1. Pat the cod dry with a paper towel, and season with ½ teaspoon salt and ¼ teaspoon black pepper on both sides; set aside.
2. In a large heavy skillet, heat the olive oil on medium heat. Add the chopped onions and cook until soft and translucent, about 3-5 minutes. Add the garlic and stir until fragrant, about 1 minute.
3. Pour the crushed or diced tomatoes, season with the remaining salt and pepper along with oregano and crushed red pepper. Bring the mixture to a boil, then reduce the heat to low and simmer the sauce for 10 minutes.
4. Add the capers and olives to the tomato broth. Carefully nestle the seasoned pieces of cod into the sauce without covering the fish with the sauce. Cover with a tight-fitting lid or foil until the fish is cooked through, about 8-10 minutes.
5. Serve on its own or with quinoa, pasta, rice or potatoes to soak up the sauce.

How to Poach Fish in Milk ~ Poaching Fish Recipe
INGREDIENTS:
1.5 pounds Atlantic Cod
4 cups milk
anise
bay leaves
black pepper corns
2-3 cut shallots
2 sliced cloves garlic
parsley stems
dill stems
celery
Sauce:
1/2 cup sour cream
1-2 tbsp. Dijon mustard
Juice 1/2 lemon
dash white pepper
zest 1/2 lemon
1 tsp. chopped capers
dash garlic powder
1 tbsp. chopped fresh dill
dash salt
*Can add anchovies
Mix, cover and refrigerate for at least an hour.
Bring milk and spices up to heat on medium where
you see some steam but no bubbles or boiling.
Place in fish fillets and cook until done.
Time depends on thickness of fish.
Remove fish from pan and let rest for a couple minutes.
Serve with a sauce of your choice on top of the fish
or on the side.
