Double Fudge Poke Cake | Betty Crocker Recipe
This lightened-up take on chocolate poke cake is packed with double fudge chocolate flavor, topped with whipped topping and sprinkled with dark chocolate shavings. It will cure any chocoholic’s craving at 210 calories per serving.

Ingredients
Cake
1 box Betty Crocker™ SuperMoist™ chocolate fudge cake mix
1 1/4 cups water
1/2 cup unsweetened applesauce
3 eggs
Filling
1 box (3.9 oz) Jell-O™ chocolate fudge-flavor instant pudding & pie filling mix
2 cups fat-free (skim) milk
Topping
1 container (8 oz) Cool Whip™ frozen whipped topping, thawed
2 tablespoons dark chocolate shavings (0.4 oz from 9.7-oz 62% cacao semisweet dark chocolate bar)

Steps
1. Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
2. In large bowl, beat Cake ingredients with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
3. Bake 28 to 33 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 5 minutes. With handle of wooden spoon (1/2 inch in diameter), poke holes almost to bottom every 1/2 inch, wiping spoon handle occasionally with paper towel to reduce sticking.
4. In medium bowl, beat Filling ingredients with whisk about 2 minutes or until starting to thicken. Pour over cake; spread evenly over surface, working back and forth to fill holes. (Some filling will remain on top of cake.) Refrigerate about 2 hours or until chilled.
5. When ready to serve, drop whipped topping by spoonfuls over cake; spread evenly. Sprinkle with chocolate shavings. Cut into 5 rows by 3 rows. Store loosely covered in refrigerator.

RECIPE - MAMIE EISENHOWER'S FUDGE

INGREDIENTS
• 12 ounces semi-sweet chocolate chips
• 12 ounces milk chocolate chips
• 2 cups marshmallow crème
• 12 ounces evaporated milk
• 4 1/2 cups sugar
• 2 Tablespoons butter
• 1/8 teaspoon salt
• Toppings or add-ins such as nuts, candy cane pieces, caramel, marshmallows
DIRECTIONS
1. Add chocolate chips and marshmallow crème to a large bowl and mix well
2. To a saucepan over medium-high heat add evaporated milk, sugar, butter and salt
3. Bring to a boil, then boil for 1 minute
4. Reduce heat and simmer 7 minutes while stirring continuously
5. Pour the hot syrup over the chocolate mixture and very carefully stir until smooth
6. Spray a 9x13 inch casserole dish with nonstick cooking spray, or coat using butter
7. Add half of the warm chocolate mixture to the casserole dish and spread evenly
8. Top this chocolate layer with nuts, candy cane pieces, caramel or any ingredients of your choice in separate areas of the casserole dish
9. Pour the remainder of the chocolate mixture over the add-ins and spread evenly
10. Top this upper chocolate layer with ingredients of your choice
11. Cool fudge at room temperature until firm, preferably overnight
12. Cut into small squares and serve. Store in an airtight container for up to two weeks.

Excellent fudge that is easy to make. The caramel I used wasn't ideal, and didn't set perfectly. It made for a messy, if delicious, experience.

Making The Cake That Won't Last
This recipe was shared with me by my neighbor, who used to make it when he was a cook at a fishing camp in Alaska. He said it was always a popular cake, and after making it and tasting it, I knew why! It is an easy cake to make, and it is moist and flavorful. It's also a sweet cake, so you really don't need to add frosting or icing, but a dusting of powdered sugar is a nice finishing touch.
3 cups flour
3 cups sugar
1 tsp salt
1 tsp baking soda
1 tsp vanilla
3 eggs, beaten
1 cup crushed pineapple, drained
2 cups shredded coconut
2 bananas, mashed (ripe ones are best)
1 1/2 cup vegetable oil
1 cup nuts, chopped (walnuts or pecans)
Preheat oven to 350 degrees.
Combine flour, sugar, salt, and soda in a large mixing bowl and mix well. Add the remaining ingredients and let stand for two minutes.
Using a large spoon or spatula, mix ingredients well to combine. Make sure that all the dry ingredients are moistening and there aren't any pockets of flour remaining.
Grease and flour a Bundt pan. Pour in batter and level top. Bake in a 350 degree oven for one hour to one hour and fifteen minutes, or whenever the top of cake springs back when gently pressed or a toothpick inserted into the center of the cake come out clean.
Remove cake from oven and let cake stand in pan for 10 minutes and then turn cake out of pan on to cooling rack. Let cake cool completely and dust top with powdered sugar. Keep in airtight container or covered with plastic wrap to maintain freshness.
