English Teacakes
In most areas of England, a teacake is a light, sweet, yeast-based bun containing dried fruits, most usually currants, sultanas or peel. It is typically split, toasted, very well buttered, and served with nice cup of tea.
This video will show you every step in making this traditional English afternoon treat.
RECIPE
550g White Bread Flour
285g Warm Milk
1 Large Egg (50g)
40g Vegetable Oil (NOT Olive Oil)
60g Sugar
7g Dried Yeast (25g If using fresh yeast)
150g Dried Fruit of your choice (I use Sultanas/Raisins)
Zest of One Lemon
1/2 tsp Salt
7g Mixed Spice (see my recipe below.)
If you can't find ready to use Mixed Spice, make your own:
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
2 teaspoons ground allspice
⅔ teaspoon ground cloves
⅔ teaspoon ground ginger
⅔ teaspoon ground coriander
1 ½ teaspoon ground mace
