How To make Fettuccine with Zucchini
1 lb Small zucchini
2 Red peppers
1/2 c Olive oil
2 Onions, chopped
2 Garlic cloves, minced
4 Tomatoes, seeded & chopped
Or 1 - 16oz can tomatoes 1 t Salt
1/8 t Dried red pepper flakes
1 lb Fettucine
Trim the ends of the zucchini and slice into long julienne strips. Cut the peppers into strips. Heat the olive oil in a large skillet and saute the onions, garlic, zucchini, and peppers for 5 minutes. Add the tomatoes, salt, and red pepper flakes and cook over low heat for another 5-10 minutes. Serve over cooked fettucine.

This recipe is easy to make as it is delicious. My regular zucchini pasta recipe, I slice the zucchini and fry them in olive oil. This time I wanted to avoid frying the zucchini and so I decided to cooked them with the fettuccine. The zucchini only needs 4 minutes to cook, any longer the zucchini will be mush. I had extra ricotta left from anther recipe and I decided to add it to give the sauce a creamier taste. The taste was out of this world. Raw Fettuccine Alfredo with Zucchini
A quick and easy recipe to make RAW fettuccine alfredo using zucchini as noodles and cashews for the alfredo sauce! SO delicious! (You can also heat your fettuccine in a saucepan for a gluten-free and vegan fettuccine if you're not on a raw diet!)
Ingredients for Alfredo Sauce:
1/2 cup Cashews
1/3 cup Water
2 tablespoons Lemon Juice
1 clove Garlic
Salt & Pepper to Taste
**Note: Grind the cashews first before adding the rest of the ingredients to the blender!**

Creamy fettuccine with zucchini, bacon and saffron. A harmonious combination of tastes.
Recipe: Ingredients:
3 zucchini
1 onion
8 flower of zucchini
bacon cutted in short stripes
milk cream
a sachet of saffron
fettuccine (bought ready made)
Obtain sliced zucchini and diced onion.
Wash the zucchini flowers, cut then
and take away the central part of flower.
Cut them like in the video.
Let's start! Pour olive oil in a pan and heat.
Put bacon and gently fry,
when it's well fried
take away it to use later in the serving.
In the same pan, with the flavour of bacon,
drop onion and start fry at moderate fire.
When onion is almost transparent
add sliced zucchini and mix.
Add some water and salt.
Add now zucchini flowers. Mix.
They will reduce rapidly in little clumps. It's normal.
In the meanwhile start cook fettuccine in boiling salty water.
Now pour in the pan milk cream and mix.
Add the half of fried bacon and keep the other for final serving.
Drop saffron powder and mix well untill all the cream is yellow.
Set fire at minimum, keep some cooking water
When fettucine are cooked (al dente) drain them
and drop in the pan. Mix untill the sauce cover all fettuccine.
Put over all the remaining fried bacon in the serving plate
or directly in the individual plates.
Optional, but recommended: sprinkle with grated Parmesan
on the individual plates.
