Directions:
Brown beef and onion in oil, stirring to crumble meat. Combine soup and milk in saucepan and cook, stirring, over medium heat until smooth. Then add chiles. Cut torillas in 1 inch squares and make 1 layer in baking dish using half of squares. Spread with layer of half of cooked meat, then with half of soup mixture and half of cheese.
Repeat layers. Bake at 325 for 20-30 minutes.

Firehouse Chicken Recipe | Smoked Chicken Quarters with The BEST Mop Sauce
This recipe came to me from a good friend Pat Dixon. He does this recipe over an open pit with hot coals. He typically uses chicken halves but today were using quarters. This recipe reminds me of the chicken you would find at Firehouse and Church BBQ fundraisers. It is fairly simple yet tantalizingly delicious. We hope you give it a try; were certain you will enjoy it!
We started our fire in the reverse flow using charcoal then alternated wood splits of cherry and oak for flavor. You want to start by cleaning your chicken thoroughly, removing any excess fat and skin where needed. Then pat dry and coat liberally with your favorite rub, we used Plowboys Yard bird. Once our smoker hit 275 degrees we put our chicken on. You want to mop this chicken every 5-10mins with the mop sauce below until the internal temp reaches 165 degrees. Remove and enjoy!
Chicken
• 10lbs of Chicken Thighs
• 1/4 Cup of Your Favorite Chicken Rub
Basting Sauce
• 5 oz. Salt
• 3 Cups of Butter or Margarine
• 3 Cups of Water
• 4 Cups of White Vinegar
• 1 Onion Chopped
• 2 Sprigs of Fresh Thyme
• 2 Sprigs Fresh Rosemary
• 1 Sliced Lemon
Combine all of the ingredients above in a medium sauce pan and bring to a boil. Simmer the mixture for at least 15 minutes. You can then place this pan right on your smoker to keep warm. Remember baste often and enjoy!

Scott Elley's Sloppy Joes

Ingredients
35 pounds meatloaf mix (equal amounts of ground beef, ground veal and ground pork)
1 to 1-1/2 cups Worcestershire Sauce
6 large Spanish onions, coarsely chopped
6 red peppers, coarsely chopped
6 yellow peppers, coarsely chopped
6 orange peppers, coarsely chopped
6 green peppers, coarsely chopped
Salt
2 tablespoons dried oregano
4 tablespoons granulated garlic
1 gallon barbeque sauce, homemade or store bought
2 tablespoons olive oil
36 sweet Italian pork sausages, casings removed
90-100 fresh hamburger buns or rolls, for serving
Directions
Divide the meatloaf mix between 2 large commercial-size pots and brown the meat for 3-5 minutes under a high flame. Drain most of the fat, leaving a little in for seasoning. Add the Worcestershire Sauce and mix well. Divide the onions and peppers between the 2 pots, add salt and crush 1 tablespoon of the oregano between your hands into each pot. Divide the garlic between the two pots and stir everything together. Cook for 3 to 5 minutes. Add 1/2 gallon of barbeque sauce to each pot, cover and simmer over low heat for 30 minutes.
Heat the olive oil in 2 large frying pans, add the sausages and cook for about 5 to 8 minutes, until no longer pink. Drain any fat from the sausages. Add the sausages from each frying pan to the pots of barbeque meatloaf mixture, and continue cooking, stirring occasionally, for about an hour. Serve over hamburger buns.

A Day in the Life: Dinner at the Firehouse
Just like other families, Sedgwick County Fire District 1 (SCFD1) firefighters cook their meals together, sit down and eat together and all pitch in to help clean-up the kitchen at the end of the meal. Crews typically begin cooking their evening meal at 5:30 p.m. and sit down to eat together by 6 p.m.
Since they work 24-hour shifts, and want to be ready to respond to an emergency at a moment’s notice, they go grocery shopping up to three times a week. Crews pitch in a certain amount of their personal money every three weeks to help purchase groceries for meals that they cook together during their shift. A typical budget for a crew of six is $30-$40 a day, and that covers both lunch and dinner.
Grocery stores understand that they may get a call in the middle of shopping. If this happens, they put the cart in the refrigerator for the crew until they return. They also make sure the truck is parked close since it’s common for them to get an emergency call at least once a week while shopping.
