How To make Fried Lumpia
------------------------------SWEET-SOUR SAUCE
1/4 c Cider vinegar
1 ts Soy sauce
1/2 c Sugar
1 c Water or pineapple juice
1/2 ts Finely grated gingerroot
1/2 Garlic clove; crushed
2 tb Cornstarch; blended with:
2 tb Cold water
Salt :
LUMPIA----------------------------------- 1/2 lb Ground pork
1/2 lb Uncooked shrimp,
- finely chopped 1/2 c Minced mushrooms
1/2 c Diced peeled jicama
2 Green onions; finely chopped
3 Egg yolks
2 tb Soy sauce
Lumpia wrappers Oil; for deep-frying To make sauce, combine vinegar, 1 teaspoon soy sauce, sugar, water, ginger and garlic in small saucepan. Bring to boil. Stir in cornstarch paste and simmer 5 minutes, or until thickened. Season to taste with salt. Keep warm. For lumpia, mix pork, shrimp, mushrooms, jicama, green onions, egg yolks and 2 tablespoons soy sauce in bowl. Mix well. Shape about 1 1/2 tablespoons meat mixture into strip and place along one side of lumpia wrapper. Roll tightly, folding in wrapper ends while rolling. Moisten edges lightly with water to seal. Repeat with remaining filling. Fry in deep hot oil until golden brown. Serve whole or cut in halves or thirds. Serve with sweet-sour sauce.

Lumpiang Shanghai is a staple in Pinoy celebrations! But with this recipe, you can easily cook it whenever you crave it! Don’t forget your to serve with your favorite sawsawan!
Serves 7 to 8.
INGREDIENTS:
Set A:
1/2 kilogram ground pork (with at least 20% fat for a juicier spring roll)
2 tablespoons oyster Sauce
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 cloves garlic, minced
1 piece onion, minced
2 eggs
1/4 cup flour
1 piece carrot, grated
A handful of kinchay or spring onions, chopped
Set B:
24-30 pieces medium lumpia wrappers
4 tablespoons flour
1/4 cup water
Set C:
3-4 cups cooking oil, for frying

For the sweet chili dipping sauce:
1 cup water
3 tablespoons rice vinegar
3 tablespoons ketchup
3 tablespoons sugar
1 tablespoon sambal oelek
3 garlic cloves, minced
1 tablespoon cornstarch
3 tablespoons water
For the Lumpia:
1 1/2 pounds ground pork
1 large carrot, minced
1 medium yellow onion, minced
3 garlic cloves, minced
2 stalk scallions, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons soy sauce
2 large eggs, separated
40 pieces lumpia wrappers (or spring roll wrappers)
4 cups extra light olive oil, for frying
