Easy Homemade Fried Oysters Recipe
Fried oysters are awesome, but they’re very rich, so it’s best to find ways to sneak them in here and there, rather than trying to make a meal of them. Make these to go next to some of our spicy Cajun egg salad, or with some Redfish Pontchartrain, or eggs Benedict. Generally two or three per person is adequate.
If you can get an appropriate number of the right size of oyster in a container already shucked, by all means use those. We find that around here it is hard to get shucked oysters that are small enough, so we buy oysters in the shell and open them with a stout butter knife, but it is much better to use an oyster knife.
Make them, season them, and eat them. Do not let them sit around.
Makes enough for 3 people: 9 fried oysters.
Equipment: • oyster knife or stout butter knife if opening the oyster shells • three breading dishes: 2 pie tins and a shallow glass or ceramic dish • medium to large saucepan or deep fryer
Ingredients: 9 ea oysters fresh 1 ea egg 1 cup AP flour to taste salt to taste Cajun seasoning
Procedure: 1. Place the saucepan about half-full of oil over medium-high heat and allow the oil to come up to cooking temperature, or set up and turn on the deep fryer. 2. Set up the breading dishes: flour – egg wash – flour (or breadcrumbs/panko optionally) 3. If shucking, shuck the oysters carefully and put clean, drained oysters into the first flour dish. 4. Coat the oysters in flour, then in egg wash, then in flour again. 5. Drop the breaded oysters into the hot oil. 6. Allow the oysters to fry for 2-3 minutes, or 90 seconds per side if they are to be shallow-fried. 7. Drain cooked oysters and season them while still hot with salt and Cajun seasoning. 8. Fry the oysters in batches if need be to avoid overcrowding the pan. 9. Serve fried oysters as a side or garnish, or with cocktail and/or tartar sauce.

Oysters Piccata An Easy Pan Fried Oyster Recipe We started with 18 medium Pacific Northwest Oysters. Dredged in seasoned flour and dipped in egg and back into our flour.
After we double dredged our oyster, we placed in 3/4 cup olive oil and 1/2 stick of butter over medium heat. Sauce until nicely browned on both side and remove and set aside. Slice one lemon and place in the hot oil to caramelize, remove and set aside. Heat 1/2 stick of butter in a small sauce pan over medium heat. Allow the butter to begin to brown and place the lemon pieces in the butter. Add 2 oz of capers and cook until heated throughout. Spoon the caper butter over the oysters.
