Angel Biscuit Chicken Casserole
1 1/2 lb. Cooked Chicken Meat
3 Cups Chicken Stock + More for Adjusting if Needed
1 Cup Heavy Cream
11 T Unsalted Butter
1/2 Cup AP Flour
1/2 Cup Chopped Shallots
1/2 Cup Chopped Celery
1/2 Cup Scallions
2 Tablespoons Lemon Thyme
1 1/2 Cups Sugar Snap Peas, Sliced into Thirds
1/2 Cup Chopped Carrots
1 Tablespoon Minced Chili Pepper
1 teaspoon Salt
1 teaspoon Black Pepper
1/4 teaspoon White Pepper
1/4 Cup Parmesan Cheese
2 teaspoons Sherry Pepper Sauce (optional)
*About 11 to 12 Angel Biscuits. After cutting them, place in the refrigerator until ready to place on the casserole.
Also, one clove of minced garlic would be really good in this but I was fresh out.

Today Annie and Tabitha are cooking up dinner from our prepping pantry and sharing two easy recipes with you: chicken pot pie and made-from-scratch brownies! It's handy to have go-to, simple recipes to put together out of your pantry, without having to leave the house!

Chicken Pot Pie Recipe:
2 cans cream of chicken soup (or cream of potato soup)
16 ounces canned or frozen mixed veggies
2 cups cooked chicken
1/2 cup milk
Pepper to taste
2 pie crusts (homemade or store bought)
1 egg (for egg wash)
Bake at 375° for 40 minutes. Let it sit for 10 to 15 minutes before serving.
Brownies Recipe:
16 tablespoons butter
2 cups sugar
4 eggs
2 teaspoons vanilla
1/2 teaspoon salt
1/2 teaspoon baking powder
2/3 cup cocoa powder
1 cup flour
Bake at 350° in a greased 9x13 pan for 18 to 25 minutes.

A slab pie, be it savory or sweet, refers to any pie that’s baked in a jelly roll pan instead of a round pan. There are advantages to this architectural arrangement, perhaps the most important being that for roughly the same amount of effort, you end up with an attractive dish that serves 12 to 15 people, instead of the usual 8 to 10. So slab pies are a natural for large summer gatherings. And since summertime is tomato time, this savory slab pie is an obvious choice. Finished with a dusting of snipped chives and garlic, this dish is as good as you’ll encounter. The tomatoes are enhanced by a generous coat of Dijon mustard on the crust, while the cream and cheese turn the tomatoes into something like a a tomato gratin.
