AMAZING GERMAN APPLE CAKE! EGGLESS AND DAIRY-FREE!
Are you ready for the easiest and yet the most delicious apple cinnamon cake ver? This autumn apple cake is moist, sweet but not too much, pleasantly tart, and extremely comforting!
INGREDIENTS:
BATTER:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon Baking Soda
Pinch of Salt
1 cup vegan Milk
1/4 Cup Apple Sauce
1 Tsp vinegar or apple cider vinegar
1/4 cup neutral oil
1/3 cup white sugar
1 teaspoon vanilla extract
TOPPING:
2 apples
2 tablespoons of sugar
1 teaspoon ground cinnamon
GLUTEN-FREE FLOUR MIX:
660g brown rice flour
330g potato starch or cornstarch
14.8g xanthan gum (weighed on a precision scale)
Use the same amount of flour in the recipe.
METHOD:
Peel, core, and cut the apples into half-moon shapes, add them into a bowl with water and add 2 tablespoons of lemon, lime, or vinegar. Reserve.
In a separate bowl, add plant-based milk, apple sauce, apple cider vinegar, neutral taste vegetable oil, sugar, vanilla extract, and a pinch of salt
Mix to combine then add the all-purpose flour, little by little, add the baking powder and baking soda and mix to combine, mix gently, do not over-mix the batter otherwise the cake won’t rise properly.
In a small bowl, add 2 tablespoons sugar and 1 teaspoon cinnamon, and mix to combine. Reserve.
Grease an 8-inch diameter spring form, place a parchment pepper in the bottle, grease it and add all the cake batter, flatten the top, place the apples overlapping them on top of the cake forming a circle, then sprinkle the sugar/cinnamon mixture all over the top and bake it a preheated oven at 350F for 25 - 30 minutes.
Serve it with vegan sour cream or vanilla ice cream!
CUPS CONVERSION:
1 cup = 250 ml / 8.45 oz
1/2 cup = 125 ml / 4.22 oz
1/3 cup = 85 ml / 2.87 oz
1/4 cup = 60 ml / 2.02 oz
