How To make Ginger Pork
2 lb Pork, cubed
1 x Flour
1/3 c Chicken broth
1/3 c Soy sauce
2 tb Sherry
1/4 c Onion, sliced
1 ea Garlic clove, minced
1 tb Sugar
1 ts Ginger, ground
1 ds Pepper
1 x Rice, cooked
3 tb Peanut oil
Dredge meat in flour. Heat oil in large skillet. Add half of meat and brown quickly. Remove meat and set aside. Pour off excess oil from pan. Combine chicken broth, soy sauce and sherry. Add onion, garlic, sugar, ginger and pepper. Place in a pan along with meat. Simmer, covered, for 15 minutes or until meat is tender. Serve over rice. -----

Japanese cooking:
1. The amount of pork slices I used was about 300g.

4. if you don’t have access to thin pork, use thicker pork(you still want it as thin as possible), coat it with wheat flour before frying. This helps the meat to stay juicier and the slight crust holds the sauce better.

姜葱猪肉 Stir-Fried Pork Tenderloin with Ginger & Spring Onion
脢肉是猪肉中最软嫩没油没筋的部位,简单的下点姜葱炒,就很好吃了。由于脢肉的产量有限,所以价钱也比其它部位的猪肉贵,有时也不一定买得到,要跟肉贩订才有。没有脢肉,用假脢肉做这菜也可以,就带点油花的廋肉部位,口感也没差,软嫩如脢肉。
份量: 4-5人份
准备时间:30分钟
煮时:10分钟
材料A:
1条/300克 脢肉(切片)
1汤匙 酱油
1茶匙 蚝油
1茶匙 粟粉
材料B :
1段/100克 幼姜(去衣切薄片)
2棵 葱(切段)
1茶匙 蚝油
1茶匙 黑酱油
½ 小碗 水
3汤匙 油
准备功夫:
1. 把材料A混合,腌制30分钟
煮法:
1. 烧热锅,加入姜片,煸香
2. 下油待热,加入腌制过的脢肉片,炒至变色
3. 加入水,蚝油和黑酱油,炒匀待滚调味 (吃得比较咸的,自行加盐或酱油)
4. 加入葱段,炒至葱段变软
5. 熄火,上碟完成

1tsp cornstarch

100g ginger (peel of the skin, slice it)
2pcs spring onion (cut into shorter length)
1tsp oyster sauce
1tsp dark soy sauce
½ bowl water
3tbsp oil
Preparations:
1. Mix all ingredients A, marinate for 30 minutes.
Steps:
1. Heat wok with oil over high fire. Add ginger, fry till fragrant.
2. Add tenderloin into wok and stir fry until nicely browned.
3. Add in water, oyster sauce, dark soy sauce, fry well and add in the seasoning. (If you prefer it a bit salty, feel free to add salt or soy sauce.)
4. Add in spring onion, stir fry until it softens.
5. Dish up and serve!

Shoga Yaki is one of the most popular and common dishes in Japan and is everyone's favorite. Usually eaten with cooked rice and some sliced raw cabbage, add a bowl of miso soup on the side to make it a complete meal.

INGREDIENTS:
3-4 thinly sliced pork
1 stub ginger
1/4 onion
1 tbsp soy sauce
1 tbsp mirin
1 tbsp sake
1 tsp sugar
oil
DIRECTIONS:
First, grate the ginger and squeeze out the juice with your hand. Grate the onion and add it to the ginger. Add in soy sauce, mirin, sake and sugar and mix well. Add in the pork slices and let it marinate for 5 minutes. Shred and thinly slice cabbage and cucumbers if you desire and set aside.
After 5 minutes, wipe off excess marinade from the pork with paper towels. Heat some oil in a frying pan and cook pork slices over medium heat. Cook both sides, being careful not to burn the meat. Add in the remaining sauce and cook for another 30 seconds. Serve with sliced cabbage and cucumbers if desired. Best eaten with a bowl of hot Japanese rice.
