A special two year anniversary video! We wanted to revisit Mapo Tofu, probably the most popular tofu dish on the planet. A while back we made a video on Mapo Tofu, and while we still like that recipe, we wanted to improve it to get a bit closer to Chengdu.
And just for fun, we decided to place our new recipe up against the recipe for Mapo Tofu from The Professional Chef, the textbook for the Culinary Institute of America. While one look at the thumbnail could probably tell you that there's a few problems there, we wanted to take the time to explore and show you how precisely that recipe errs. Hopefully, in the process, we can impart some guidelines... some things to avoid. After all, sometimes learning how *not* to do something can be just as - if not more - illuminating than how *to* do something.

In this Chinese street food video, we're bringing you on a full on Dan Dan noodle tour of Chengdu, China, DEEP in the heart of Sichuan in Southwest China. This is the land of delicious and spicy Sichuan cuisine, sometimes spelled Szechuan cuisine. There are so many famous Sichuan foods to try here in Chengdu, but today, we are trying 4 different variations of Dan Dan noodles, also sometimes called Zajiang noodles.

China has so many amazing street foods to try, and I've been filming and documenting them for you for the past 4 years. In my opinion, the best noodle dish in China is dan dan noodles, right here in Chengdu, Sichuan. China has some of the best street food around the world, and these dan dan noodles were INSANELY GOOD, some of the best noodles in China for sure!
If you're traveling to China to eat and try different street foods, and perhaps want to learn a little bit about Chinese food and chinese cooking in the process, you need to try a few different variations of Dan Dan noodles. When they prepare the traditional Chinese dan dan noodle recipe right on the street, you can watch as they scoop the main ingredients like chili oil, soy sauce, sichuan peppercorn, and garlic right into the noodle bowl and then place the steaming hot noodles right over top. It's truly satisfying! After they put the noodles over top, they place their signature fried ground pork on top, known in Chinese as shaozi.
When your dan dan noodles arrive to your table, it is very important to mix up all the chili oil and all of the ingredients throughout. This ensures that the flavour and the hot oil gets coated onto each noodle before you take a bite. It's also quite satisfying mixing the noodles and watching the dark red oil slowly turn each noodle from white into red and silky smooth.
When you take your first bite, you'll understand why this is one of the BEST Chinese street foods you need to try. The spicy noodles are coated with an incredibly aromatic chili oil and really send you straight up to heaven! It's one of the best forms of Chinese cooking!

How to Make: Minute Chicken Pan Fried Noodles
Chef Keoni's Minute Chicken Pan Fried Noodles is the perfect dish for busy weeknights or any holiday get together. Imagine crispy noodles topped with juicy and flavorful chicken marinated in oyster sauce, shoyu and Chinese rice wine.
Ingredients:
Chicken (For Marination)
1 Package Chow mein noodles 10oz. ((crown noodle recommended))
4 Tablespoons Vegetable oil
1 Pound Boneless skinless chicken thighs
1 Tablespoon Shoyu
1 Teaspoon Chinese rice wine or sherry
1 Tablespoon Oyster sauce
1⁄2 Teaspoon Baking soda
1 Tablespoon Cornstarch
1 Teaspoon Sesame oil
Stir Fry
4 Tablespoons Oil
2 Cups Choi sum
Sauce
2 Cups Chicken stock or broth
3 Tablespoons Oyster sauce
2 Tablespoons Shoyu
2 Teaspoons Sesame oil
1 Teaspoon Sugar
1⁄2 Teaspoon White pepper
Cornstarch Slurry
3 Tablespoons Cornstarch

Chinese Street Food Level 9000 - The Ultimate Chinese Street Food Tour in Chengdu, China! This is Sichuan Food HEAVEN!
In this Chinese Street Food Tour video, we’re bringing you in DEEP to try 4 amazing Chinese street foods in Chengdu. Here, the Sichuan food is world famous for being SPICY, Fragrant, and a little numbing as well from the Sichuan peppercorn.
Today, we’re going for a street food adventure to these 4 street food stalls to taste some delicious and spicy street foods and also a famous Sichuan dessert.

We’re starting first thing in the morning for Chinese breakfast and going to a famous Sichuan Noodle Joint in Chengdu. This noodle restaurant is famous for its twice cooked pork noodles AKA huiguoroumian 回锅肉面.
Huiguorou twice cooked pork is a famous Sichuan food that is best in Chengdu. And to find it on top of noodles is very RARE. To me it’s like an upgraded dan dan noodle. The flavour is even stronger and more aromatic. And we were so lucky to get into the kitchen to watch the chef Mr.Yu cook his family recipe and serve it to us!
After this, we found the true Chinese Street Food LEVEL 9000 dish, the sweet sticky rice balls AKA Tangyou Guozi 糖油果子. Tangyou guozi are a very traditional Chinese street food in Chengdu that you need to try. The sticky rice balls are fried in a huge wok full of oil for about 10 minutes and then covered in a dark sweet molasses. They are crispy on the outside, gooey on the inside, and are incredibly sweet!
After this, we’re continuing our journey for another famous Chinese street food - WONTONS. And today, we got invited into the prep area of a famous wonton restaurant in a little neighbourhood of Chengdu. This restaurant serves a variety of special wontons famous in Sichuan cuisine. Watching the master chefs prepare these elegant and expensive wontons was a highlight of our Chinese street food adventure. They are most well known for their ganhaijiao chaoshou AKA spicy wontons covered in peanut and chili. You can order them dry or with stock. I prefer them dry. They also had two other amazing wonton dishes, one made with pork and another made with shrimp, pork, and crab egg, kind of like a Seafood wonton! Each of these were made with a chicken stock and served with either matsutake mushrooms or local fungus.
And to finish off our Chinese street food LEVEL 9000 Adventure - we’re going to the most famous Szechuan food of all, the Szechuan hot pot! Here in Chengdu, you can get extremely spicy and flavourful Sichuan hot pot almost anywhere. But we set out to find the most local style one and found a little place in a small neighbourhood in Chengdu. It was definitely one of the BEST hot pot restaurants in Chengdu! It was very spicy and flavourful and full of chili and Sichuan peppercorn!
