How To make Greek Style Cheesecake
BODY:
1 x Margarine
3 pk 8-ounce cream cheese, soften
1/2 c Sugar
2 tb Flour
3 ea Eggs
1/2 c Plain yogurt
1/2 ts Grated lemon peel
TOPPING:
1/3 c Honey
1 tb Margarine
BODY: Line bottom of 9-inch springform pan with wax paper. Lightly grease sides of pan with margarine. Combine cream cheese, sugar and flour, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in yogurt and peel. Pour into prepared pan. Bake at 325, 50 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill. TOPPING: Combine honey and margarine in small saucepan. Bring to boil over medium heat, stirring constantly. Continue boiling 1 minute. Cool to spreading consistency. Spread over chilled cheesecake just before serving. Garnish with lemon peel and fresh mint, if desired.

This Greek Yogurt Cheesecake looks like a cheesecake and tastes like one but there is no cheese added! The texture is like eating a cloud super light and fluffy. You can use whatever topping you like, this yogurt cheesecake goes well with everything - I decided to make a Belgian chocolate ganache and coconut topping:)
Recipe for a 1/4 pan
1. Batter (all ingredients should have room temp)
-1400g natural Greek yogurt
-8 large eggs
-280g sugar (beat with egg yolks)
-200g sugar (beat with egg whites)
-10g vanilla paste
-120g vanilla pudding powder (try to buy high quality pudding powder like Dr. Oetker)
-225g canola oil
-pinch of salt
2.Chocolate ganache
-100g dark Belgian chocolate min 60%
-100g heavy cream
Melt together - watch the temp. max 118F!!
-50g shredded unsw. coconut
There is no need for making a crust - this cheesecake has a nice jiggly consistency just make sure to chill the cake for min 8H before cutting.

EASY Mini Cheesecakes! Mini cheesecake recipe - No bake VS Baked

● Baked Easy Mini Cheesecakes:
- 400 g Philadelphia Cream Cheese ( 14 ounces )
- 200 g unsweetened Yogurt ( 7 ounces )
- 150 g Sugar (3/4 cup)
- 2 Eggs
- Grating of Lemon Zest
- 1 tsp Vanilla
- 20 g Flour ( 2 tbsp )
Bake for 15 minutes!
● 5 minute No Bake Mini Cheesecakes:
- 400 g Philadelphia Cream Cheese ( 14 ounces )
- 200 g Heavy Cream ( 7 ounces )
- 100 g Sugar ( 1/2 cup)
- 1 tsp Vanilla
Freeze for 15 minutes, then enjoy :)
● For the cheeesecake crust:
- 80 g Digestive biscuits/graham cracker cookies ( 3 ounces)
- 30 g Melted Butter ( 2 1/2 tbsp)

This is my version of a Cream Katifi, a traditional Greek desert. So after my trip to Greece I was inspired to make my own and so I made these Vanilla cheesecake version.
