How To make Beef Pita, Greek Style
2 lb Ground Beef
1 ea Med. Onion, Chopped
4 ea Small Cloves Garlic, Minced
1/2 lb Fresh Mushrooms, Sliced
1 ea Bay Leaf
1 1/4 ts Salt
1/2 ts Chil Powder
1/2 ts Cumin Powder
1/4 ts Cinnamon
8 oz (1 cn) Tomato Sauce
1/3 c Burgundy Or Rose Wine
1 ea Large Egg
8 oz (1 pk) Cream Cheese,Softened
1 c Creamed Cottage Cheese
1/2 c Crumbled Feta Cheese
1/2 c Unsalted Butter, Melted *
8 oz (1/2 Pk) Phyllo Leaves **
1/4 c Dry Bread Crumbs
GARNISHES:
1 x Parlsey Sprigs
12 ea Cherry Tomatoes
1 x Fresh Fruit Kabobs (opt.)
* Unsalted margarine, melted, can also be used. ** Phyllo Leaves are greek pastry and they should be defrosted. ~------------------------------------------------------------------------- Combine ground beef, onion and garlic in a large frying-pan; cook, stirring frequently until beef loses pink color. Pour off drippings. Add mushrooms, bay leaf, salt, chili powder, cumin powder, and cinnamon; cook, stirring frequently, until mushrooms are tender about 5 minutes. Stir in tomato sauce and wine; cook, covered, 10 minutes, stirring occasionally. Remove bay leaf. Cool while preparing cheese filling. Combine egg and cream cheese in medium bowl, beat with electric mixer until smooth. Stir in cottage and feta cheeses and blend. Brush 13 x 9-inch baking pan with melted butter. Line pan with 1 sheet of pastry, fitting pastry to contour of pan. (Pastry will come up over edges of pan.) Brush pastry with butter. Layer with 3 more pastry sheets, brushing each with butter. Sprinkle bread crumbs evenly over top. Spoon 1/5 of meat filling in layer over crumbs and 1/5 of the cheese filling over meat. Place 1 pastry sheet over cheese filling, crinkling to fit inside dimensions of pan; brush with butter and layer with 1/5 of the meat and 1/5 to the cheese fillings. Repeat with 3 more pastry sheets, crinkling each, brushing with butter and topping with fillings. Turn bottom pastry ends up over filling. Place remaining 8 pastry sheets smoothly over top, brushing each with butter. Using spatula, tuck top pastry sheets around inside edges of pan. With sharp knife, score top lightly in half lengthwise and sixths crosswise. (Do not cut through) Bake in moderate oven (350 degrees F.) 1 hour or until top is golden brown. Cool at least 10 minutes before cutting along scored lines. Place a cherry tomato on each of 12 small wooden picks and insert pick in center of each serving. Garnish with parsley. Garnish individual servings with fresh fruit kabobs, if desired. FRESH FRUIT KABOBS: To make fresh fruit kabobs, place chunks of fresh pineapple, cantaloupe, whole strwberries or other fruits in season on small wooden skewers.

Ingredients

4 chicken breast ( 800g - 850g )
1/4 cup Greek yogurt
3 large clove garlic minced
3 tbsp olive oi
2 tbsp lemon juice
1 small lime juice
2 tbsp dried oregano leaves
1/2 tbsp salt
1/2 tsp black pepper (salt and pepper to your taste)
6 flat Greek pita bread
1 medium tomato thinly sliced
1 small red onion thinly sliced
1 small bunch parsley chopped

The Best Beef Shawarma Recipe

Ingredients
1 onion, thinly sliced
1 and 1/2 pounds (680g) rib-eye steak, flank, or flap
1/4 cup olive oil
1/4 cup balsamic vinegar or plain vinegar
juice of half a lemon
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
6 garlic cloves, grated
2 tablespoons of plain yogurt
The Spices:
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika (not smoked)
1 teaspoon dried crushed oregano
1/2 teaspoon ground dried turmeric
1/4 teaspoon crushed red pepper flakes
optional: 1/4 teaspoon cinnamon, 1/4 teaspoon ground cardamom, 1 teaspoon sumac, 1/4 teaspoon allspice
The Pickled Onions:
1 red onion, thinly sliced
1/2 cup apple cider vinegar
1/4 cup red wine vinegar
1 tablespoon sugar
1 and 1/2 teaspoons salt
Tahini Sauce:
1/2 cup tahini
1 garlic clove, grated
1/4c-1/3 cup fresh lemon juice
2-3 tablespoons yogurt
warm water
salt, to taste
garnish: parsley and sumac
Shawarma Sauce:
1 cup plain yogurt
1/4 cup mayonnaise
2 tablespoons lemon juice
1 garlic clove grated
Instructions
Marinate the Beef:
Cut the beef against the grain into thin slices. Place it in a large mixing bowl. Add the onion, spices, olive oil, vinegar, lemon juice, garlic, and yogurt. Mix it all together and set aside at room temperature for 30-40 minutes or cover with plastic and refrigerate overnight.
Make the Pickled Onions:
In a small sauce pan, bring 2 cups of water to a boil. Remove from heat and immerse the onion slices in the water for a minute. Drain the water. In a bowl or container that the onions will be stored in, combine the vinegar, sugar, and salt and mix together. Add the onions and toss in the vinegar. Once they come to room temperature, refrigerate until ready to use.
Make the Tahini or Shawarma sauce by combining the ingredients in 2 bowls and whisking them together. Taste the sauces and adjust the seasoning if needed.
Cook the Shawarma:
Place a cast-iron skillet over high heat. Cook the shawarma in two batches as to not overcrowd the pan. Cook the meat approximately 4 minutes on each side. Transfer to a serving platter and garnish with fresh parsley and lemon wedges.
Serve the beef shawarma with pita, rice, or a salad, and with pickes.

How To Make Arayes - Pita Stuffed With Meat
Arayes - delicious grilled pita bread sandwiches stuffed with meat (beef or lamb). This middle eastern dish is crispy in the outside and juicy in the inside. You can cook them on the grill or in striped frying pan. This meal is good for lunch, dinner or even BBQ party.

Ingredients:
700g ground beef/lamb
1 cup parsley finely chopped
1 medium onion - finely chopped
1 tsp Baharat
1/2 tsp cumin
1 tsp salt
1 tsp black pepper
2+5 tbsp olive oil
12 pitas (recipe for homemade pita bread:
1/4 cup toasted pine nuts (optional)
Directions:
1. In a large bowl place beef, chopped onion, chopped parsley, salt, pepper, Baharat, cumin, 2 tbsp olive oil, pine nuts (optional) and Mix well.
2. Cut each pita in half and fill with 60g of meat mixture.
3. Brush with olive oil on both sides of the pita
4. Fry the pitas in striped frying pan over high heat, 2 minutes from each side, first on open side.
5. Serve with fresh salad and tahini
