Skirt Steak Fajitas On A Weber Kettle Grill Using A Weber Cast Iron Wok
Today I made Skirt Steak Fajitas On A Weber Kettle Grill Using A Weber Cast Iron Wok! First I grilled the skirt steak on the grill, then I cut it up and added it to the grilled peppers to finish cooking and these fajitas were so delicious! You will find the fajita marinade and fajita seasoning ingredients below. I used 2.8lbs of skirt steak.
Marinade:
1 Bunch of Cilantro diced
2 Tbsp Dried Minced Onion or 1/2 diced onion
1 Orange or substitute about 1/2 cup orange juice
1 Lime
3/4 Cup Olive Oil
1 Tbsp New Mexico Red Chili Powder or your favorite
1 Tbsp Red Wine Vinegar
1 Tbsp Granulated Garlic or Cloves diced
1 tsp Salt
1 tsp Pepper
1 tsp Cumin
1 tsp Mexican Oregano or Regular
Fajita Seasoning:
2 TBSP chili powder
1 TBSP paprika
1/2 TBSP ground cumin
1/2 TBSP garlic powder
1/2 TBSP onion powder
1 TBSP dried oregano
1 TBSP salt
1 TBSP sugar - optional
1/2 teaspoon cayenne pepper

Grilled Steak Fajitas - Mexican Style with Grilled Veggies

Grilled Steak Fajitas
2 - 3 skirt steaks
Lime juice
1 yellow bell pepper
1 red bell pepper
1 orange bell pepper
2 jalapenos
I large onion
1/4 cup water
Seasoning mix
¼ cup of chili powder
2 tablespoons cumin
1 ½ tablespoons coarse sea salt
1 ½ tablespoons coarse ground black pepper
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon red pepper flakes
2 teaspoons oregano
3 teaspoons Ancho Chili powder
-Rub both sides of steak with lime juice and then sprinkle with the seasoning mix over the meat generously on both sides and rub in well. Be sure to reserve about 1 tablespoon of the seasoning to sue later.
-Place in a plastic sack and refrigerate for at least 6 hours or overnight. Remove from the refrigerator 40 minutes before grilling.
-Cut peppers, jalapenos and onion in half. Place on a clean and oiled grill and cook until charred and tender, flipping and rotating as needed. Close the lid while grilling. Set aside in a warm place.
-Place steak on an oiled grill over medium-high heat and close the lid and cook about 2 to 3 minutes per side. Remove from grill and let rest a few minutes before slicing. Slice thinly at an angle against the grain.
-Slice the veggies and place in large cast iron skillet. Stir in the sliced meat. Add the water. Season with the remaining seasoning mix, to taste. Simmer for about 45 minutes, stirring occasionally.
-If using a crockpot, add about 1/2 cup of water and cook on low for about 45 minutes to 1 hour.
Serve with tortillas, cheese, sour cream, etc.

Grilled Margarita Steak Fajitas Recipe ~ Noreen's Kitchen
Greetings! Today we are grilling some amazing Margarita steak fajitas! You know you want some! These were amazing and they are the perfect quick throw on the grill meal.
You will want to think about these in advance and have the meat marinating and waiting for you to toss on the grill so that all this amazing flavor. Mix up the marinade and toss the meat and the sauce in a zip top bag and put it in the fridge for at least four hours but overnight would be even better.
Grill this on indirect heat over coals or gas to your desired doneness. Then allow the meat to rest for 10 minutes before slicing thin and serving!
Go crazy with your accompaniments. We love homemade guacamole, some sour cream and cheese along with warm Cesaro tortillas, salsa or pico de gallo and fire roasted veggies that went on the grill after the meat was done. We use a grill tray to cook the veggies so they don't fall through the grate.

Here is our updated recipe for The best carne asada -
Ingredients:
2-4 Pound of Skirt steak or your choice of Beef
(Chuck Steak or Ground Beef for burgers)
3-4 Tablespoons of Soy Sauce
3-4 Fresh Chopped Garlic Cloves (Just clarify most people wouldn't use whole garlic LOL)
1-2 Tablespoons Bouillon of Choice or 1 Teaspoon Salt
1/2 Teaspoon of White or Black Pepper
1 Teaspoon Ground Cumin
1/2 Teaspoon Paprika
1 Teaspoon Chili powder
1-2 Teaspoons Ground Ginger
1/2 Teaspoon Garlic Powder
Optional
Oil
1/2 Teaspoon of Apple Cider Vinegar or Lime Juice
1 Teaspoon Sugar if you like a sweet fajita
1/4 Cup Beer if you're Grilling outside
