Using a chicken marinade is one of the best ways to give your chicken breast recipe some big flavor and maximum juiciness. From a bright Greek lemon marinade, to punchy honey mustard, and everything in between - here's everything you need to know about making (and using) the best chicken marinades!
While I'm all for dry rubs for a savory top coat, chicken marinades have their own benefits. They're great for locking in your favorite flavors, tenderizing the meat, and keeping it ultra juicy as it cooks. That's especially important for when you're cooking up chicken breasts - because we all know how easily they can dry out.
In addition to chicken breasts, these marinades can be used for chicken thighs (my favorite), or even chicken drumsticks, depending on what type of meal prep you've got going for the week. Grilled Chicken Fajitas - Girls can Grill - Episode #114
Chicken fajitas
Serves 4-6
1 lb chicken breast, sliced thinly
1/4 cup olive oil
1 lime juiced
1/2 t black pepper
1 T cumin, chili powder, garlic powder & onion powder
1 t salt, paprika
1/8-1/4 t cayenne pepper
12 oz bag frozen peppers & onions
Whisk olive oil, lime & spices until well mixed.
Place chicken, veggies in a gallon ziplock bag and pour mixture on top. Close bag, removing as much air as possible & massage.
Refrigerate 4-6 hours or up to 24 hours.
Grill instructions
Preheat grill to 425-450-*
Place chicken & veggie mixture on a large piece of heavy duty foil. Wrap well (I double wrap)
Place on grill cook 10 minutes, flip and cook additional 10-15 minutes. Remove from grill and let set 5 minutes prior to opening.
Oven instructions
Preheat oven to 425*
Pour in 9x13 pan cover with foil bake 25-30 minutes. Remove from oven and let set 5 minutes prior to opening.
Crockpot instructions
Pour into crockpot cook on low 4-6 hours or on high 2-3 hours.
Skirt Steak Fajitas I Tuffy Stone
The marinade for this one takes a little time, but it's well worth it and absolutely transforms the Skirt Steak to the next level. These are a crowd favorite and if you mix and match toppings, the kids will love them too.
Fajitas Kill It & grill It style
ONE ingredient that makes fajitas tender is pineapple juice.
Store-bought fajita seasonings usually contain enzymes that help tenderize the meat. So to get the same tenderizing effect without any weird ingredients, we use pineapple juice.
The other ingredients are simple! A little lime juice, some Worcestershire sauce, Soy Sauce, Fish Sauce, garlic, chili powder, Hungarian paprika, Cumin, a little olive oil, chopped cilantro, and a little salt and pepper. That is it!
Combine the ingredients for the marinade and let marinate for at least 4 hours or overnight. The longer you let them sit, the tastier they are.

A few tips:
- Use thinly sliced chicken breasts (preferably) or chicken tenders
- Leave chicken in marinade overnight or at least 5-7 hours
- Use either a grill or large skillet (cast-iron recommended)
- Make sure chicken reaches 165°F internal temp before serving.
- Freeze cooked chicken fajitas for an easy weeknight meal
- Add pico de gallo, guacamole (avocado), cheese, sour cream, red peppers, yellow peppers, green bell peppers and onion, as desired
- Squeeze fresh lime juice on cooked chicken fajitas for extra tangy flavor
- Serve with flour tortillas or corn tortillas
