How To make Grilled Spiced Fish
4 oz Sole, skinned
Salt and pepper to taste 2/3 c Plain yogurt
2 ts Garam Masala
1 ts Ground coriander
2 Garlic cloves, crushed
1/2 ts Chile powder
1 tb Lemon juice
Lemon wedges for garnish Rinse fish, pat dry with paper towels and place in a shallow non-metal dish. Sprinkle with salt and pepper. Mix together yogurt, coriander, chile powder, garlic, and lemon juice. Pour over fish. Cover and refrigerate 2 to 3 hours to allow fish to absorb flavors. Preheat broiler. Transfer fish to a broiler rack; cook about 8 minutes, until fish just begins to flake, basting with cooking juices and turning over halfway through cooking. Serve hot, garnished with lemon wedges. Spicy food is rather common in Singapore so when Sichuan cuisine is brought over to our shore, they immediately became a hit. Almost all the coffeeshops or foodcourts in Singapore these days have at least one stall selling Sichuan food. Sichuan (Szechuan or sometimes spelt as Schezwan) food has a unique bold and lip-numbing spiciness in most of their dishes because of the liberal use of garlic, Sichuan peppercorns and other spices. One of their most popular dishes is this Spicy Fish Hot Pot or Chong Qing Grilled Fish. The soup base of this dish is good to go with rice and noodles. You can also add any side ingredients, such as beancurd skin, tofu, mushrooms, prawns, instant ramen noodles, etc to this dish. If you have a party coming up, you can consider serving this over a portable stove and have the side ingredients placed on the side so that your guests can cook while they eat. Sichuan Spicy Fish Hot Pot (Szechuan Chong Qing Grilled Fish) 重庆烤鱼
Ingredients:
Serves 6 pax

Grilled fish - bake at 200C or 400F for 20 mins

400g fresh fish (you can use sea bass, snapper, etc)
1 teaspoon salt
0.5 teaspoon light soy sauce
1 tablespoon cooking oil
0.5 tablespoon chilli powder

Soup base

20g young ginger - chopped
5 cloves garlic - chopped
2 tablespoons Sichuan peppercorns
15 dried chilli (rehydrated & cut into small pieces)
2 tablespoons Chinese spicy paste (Xiang La Jiang 香辣酱) can use spicy broad bean paste 豆瓣酱
1.2L water
1 chicken stock cube
1 teaspoon sugar

300g enoki mushroosm
100g soybean sprouts
50g sweet potato vermicelli (can be replaced with glass noodles/ tanghoon)

Delicious Grilled fish recipe
This is a quick Grilled Fish dinner that comes in handy on those days I don't want to spend a lot of time in the kitchen.
1 teaspoon Herb Salt (you can use plain salt)
1 teaspoon Holy Spirit Spice (or your favourite mixed spice)
1 teaspoon Uziza (or Black Pepper)
2 Tablespoons Dry Pepper Mix (or Cayenne Pepper)
1 tablespoon Ginger-Garlic-Onion Paste
1 tablespoon Green Paste
Mix all together
Rub inside and outside the fish
Leave to marinate for 30mins (or you can do it waaaay ahead and put it in the freezer. Then when you are ready, you defrost and bake or Airfry)
I used the Preset Fish Function of the Ambiano Airfryer Oven and it was automatically set to 200C and 25mins
Delicious, simple and quick!
We had it with Solid Pap (Eko) and Steamed Veggies.

Ingredients for Grilled Fish:
- Fish fillets - 4 (total of 300-350 gms.)
1st marinade:
- Salt- 1/2 tsp
- Crushed peppercorns- 1/2 tsp
- Juice of 1/2 small lemon
2nd marinade:
- Red Chilli flakes-1 tsp
- Dark soy sauce- 1 tsp
- Red Chilli Sauce- 2 tbsp
- Garlic, finely chopped- 1 tbsp
- Refined oil- 2 tbsp
Preparation:
- Marinate the fish fillets with the 1st marinade. Mix well and set aside for around 10 mins.
- Fine chop the garlic and prepare the sauce mix for the 2nd marinade.
- Spread the 2nd marinade evenly on both sides of the fish fillets.
- Set aside for 30 mins.
- Process:
- Preheat the grill pan and brush the grill pan with 1 tsp oil.
- Place the fish fillets side by side and grill on medium heat for 2 mins.
- Turn over the fish fillets and put rest of marinade on top. Grill the other side for 2 mins on medium heat.
- Flip the fillets again and reduce heat to low, basting the fillets with the oil/marinade on the grill pan and grilling it for 2 mins.
- Repeat the same on the other side again for 2 mins on low heat.

Fastest and easiest grilled salmon
Think grilling a big slab of salmon is complicated? Think again! I flavour salmon all kinds of ways, but for this one all I used was kosher salt, freshly ground black pepper and freshly squeezed lime juice. I heated the bbq to 500°F, cooked it for about 5 minutes on each side and served it hot. Make sure to grease your grates before cooking the fish. So good!
