How To make Gulai Kambing (Spiced Lamb)
1 3/4 lb Lamb, fresh
2 ea Onion
3 ea Thai chile
1 x Ginger, fresh; 3/4" knob
1 x Lemon grass root, 1/2" knob
1 ea Lemon grass, stem
2 ea Garlic clove
8 ea Macadamia nut
2 ea Tomato, ripe
1/3 c Oil
1/2 t Cardamom, ground
1/2 t Cumin powder
1/2 t Turmeric
1/4 t Fennel powder
1 ea Cinnamon stick; 2"
4 ea Cloves, whole
1 x Salt; to taste
1 x Pepper, black; to taste
4 c Coconut milk
Calories per serving: 553 Fat grams per serving: 26 Approx. Cook Time: 1:00 Cut the lamb into bite-size chunks. Chop the onions, chiles, ginger, lemon root and lemon grass. Crush the garlic and grind the macadamia nuts. Skin the tomatoes and cut the flesh into small dice. Heat the oil in a large pan, add the onion, chiles and garlic and saute until the onion becomes translucent. Then add the lamb, ginger, lemon root, lemon grass and tomato and cook for another three minutes, stirring frequently. Add the spice powders, cinnamon stick and cloves and season to taste with salt and pepper. Pour in the coconut milk and bring to the boil, stirring constantly, then lower heat and allow to simmer until the meat is very tender; approximately 45 minutes. Serve immediately with steamed rice.

- 2 pieces of lamb shank
- 2 tablespoons garlic ginger paste (2 inches of ginger and 6 cloves of finely ground garlic)

Hi everyone! #LetsCooking and today menu is.
Mutton Curry / Gulai Kambing.
*Ingredients*
- 1 kg of Mutton.
- A large bowl of water.
- 1 litter coconut milk
- Salt.
- Sugar.
- Beef broth.
- 5 cloves.
- 3 Star anise.
- 2 Cinnamon stick.
- Bay leaves.
- Kaffir leaves.
- Lemon grass.
- Cooking Oil.
**Blended spices*
- Shallot
- Garlic.
- Red chili.
- Coriander.
- Candlenut.
- Turmeric.
- Grated Ginger.
- Grated galangal.
Resep Gulai Kambing || Indonesian Mutton Curry
RESEP GULAI:
INGREDIENTS:
Mutton
Red chilli
Coconut milk with water
Pure coconut milk
White pepper
Cumin powder
Beef flavor powder
Salt
Onion
Ginger
Garlic
Turmeric
Turmeric leaves
Lemon grass
Lime leaves
Cinnamon
Star anise
Siam cardimom
Brown sugar
Candle nut
Nutmeg
Galangal
Corriander powder
Gulai masala (indofood)
PREPARATION:
• Prepare spice paste by grinding onion, garlic, ginger, candle nut, turmeric, lemon grass, red chillis and small amount of coconut milk in food processor.
• Prepare siam cardimom and nutmeg powder by grinding them in a mortar and pestle.
• Boil water in a pot and add pressed ginger and mutton in it.
• In another pot, dash small amount of oil and add spice paste in it.
• Add lime leaves, turmeric leaves, galangal, cinnamon and star annise in it.
• Add corriander powder, white pepper, cumin powder, salt, nutmeg and siam cardamom powder in it and mix well.
• Now add gulai masala (indofood) and mix properly then add previously boiled mutton in it.
• Add coconut milk with water in it, cover the lid and cook for about 30 minutes.
• After about 30 minutes add brown sugar and beef flavor powder in it and mix them well.
• Finally add pure coconut milk in it. Cook for about 10 minutes.
• Delicious gulai is ready to serve. Sprinkle fried onion on the top of serving dish for garnishing purpose.
• Serve the delicious lamb curry (gulai kambing) with steamed white rice.
