How To make Gumdrop Cookies
Ingredients
2
cup
brown sugar, packed
1
cup
shortening
1/2
cup
buttermilk, or water
2
each
eggs
3 1/2
cup
flour
1
teaspoon
baking soda
1
teaspoon
salt
3
cup
gumdrops, cut-up (3 to 4 pieces)
Directions:
Mix brown sugar, shortening, buttermilk and eggs. Stir in flour, baking soda, salt and gumdrops. Cover and refrigerate at least 1 hour. Heat oven to 400 degrees. Drop dough by rounded teaspoonfuls about 2 inces apart onto ungreased cookie sheet. Bake until almost no indentation remains when touched, 8-10 min. Immediately remove from cookie sheet.
Note: Scissors, dipped occasionally into hot water, cut gumdrops easily.

Another christmas cookie recipe that I'm sharing with all of you :)
It's like an oatmeal cookie with gummies! Seems little strange but I personally love these cookies, especially cold as I like the texture of gummy bears in ice cream so if you are the same then try these cold ;)
It's a classic family christmas cookie recipe that has been made for years and loved by many. Great to add for a Christmas cookie exchange or a party!
I certainly suggest trying out these cookies, they are delicious cold or at room temperature. They may look a little strange but they can add colour which is always nice and give a little uniqueness.

Why Is This Cookie So Good - Gumdrop Cookies - A Simple Shortbread Cookie With Slices Of Gumdrops
I vaguely remember making this cookie in my teens. I must have been old enough to drive because I remember driving someplace to buy gumdrops. Gumdrops were never a staple ingredient in our house, so I need to buy them specially for this recipe. Oh, I remember why I never made them again. Slicing 100 gumdrops killed my enthusiasm for this cookie. LOL. But still a yummy cookie.. Just make it.

Dough:
In a large mixing bowl cream 1 cup butter with 1 1/2 cup powder sugar. Once fluffy beat in 1 egg and 1 teaspoon of vanilla. Once creamy mix in 2 1/2 cups flour, 1 teaspoon baking soda, 1 teaspoon cream of tartar and 1/4 teaspoon salt. Once combined form into a long log and refrigerate overnight. You might want to do it as two logs.
Preheat oven to 375°.
Slice the dough into 1/4 thick discs. Next slice the gumdrops and place onto of the cookies. It will take roughly 100 gumdrops if slicing them into 3 or 4 pieces. Bake for 12 minutes. Allow to cool before serving.
