Hate Christmas Fruit Cake? This Gum Drop Cake Recipe Is For You
I get it - some people don't like Christmas Cake / Fruit Cake. (Mind you we have an excellent Christmas Cake Recipe: ) This is different, this is a Gumdrop Cake... all the colours give it a festive look, the gumdrops make it fun for the kids, and the pineapple keeps the cake moist. This gumdrop cake recipe is also an alcohol free Christmas Cake recipe alternative.
Ingredients:
1 cup butter
3 eggs
3 cups flour
2 tsp baking powder
16 ounce can crushed pineapple
1½ cup sugar
1 tsp vanilla
½ tsp salt
½ lb baking gum drops
16 ounces glacé cherries
Method:
Cream butter and sugar, then cream in eggs one at a time.
Mix in vanilla.
Mix in flour and baking powder.
Mix in pineapple, then gum drops and cherries.
Bake in a 9”x11” greased pan.
Bake at 250ºF for about 4 hours, or 325ºF for about 2 hours.

Well, I actually like fruitcake, and I wanted to share with you a very real, very old, Canadian Prairies recipe: the Gumdrop Fruitcake.
You know me, Venus loves to bring you original or less well known recipes, and I just love the texture of the gumdrops in this dessert!

✅Ingredients
• 6 envelopes (4 tbsp + 1½ tsp) unflavored gelatin
• 1 cup cold water
• 1½ cups boiling water
• 4 cups sugar
• 2 tsp flavored extract lemon, orange, peppermint, etc
• 12 drops liquid food coloring
• 1 cup sugar for coating

1️⃣ 00:01:41 - In a large pot (yes, a large stew pot, you'll need it!), stir together the gelatin and cold water. Let sit 5 minutes.
2️⃣ 00:02:14 - Meanwhile, let the additional water come to a boil in a small saucepan or in the microwave. Pour the boiling water over the gelatin mixture and stir until dissolved, about 1 minute. Stir in the sugar.
3️⃣ 00:02:51 - Place the pot over a burner at medium-high heat. Bring to a boil, then reduce heat to medium-low. Let simmer until the mixture reaches 240-255 degrees F, about 25 minutes, stirring constantly and scraping sides to avoid burning any sugar. The mixture will get quite thick.
4️⃣ 00:00:46 - Remove from heat and stir in the flavor extract of your choice. Next, add food coloring, or divide the mixture among bowls and add food coloring for multiple colors.
5️⃣ 00:03:53 - Pour gelatin into silicone molds. Let sit at room temperature for 12 hours.
6️⃣ 00:04:33 - Remove candy from molds. If you need to cut the candies, run your knife under hot water before each cut to avoid sticking. Roll in extra sugar to coat.
7️⃣ 00:06:14 - Place on a wax paper lined tray. Cover with a tea towel and let sit at room temperature for 48 hours to crystalize.

You’ll need
1 cup butter
1 cup white sugar
4 large eggs room temperature
1 teaspoon vanilla extract
2 teaspoons almond extract
2 1/2 cups all-purpose flour
2 tablespoons cornstarch
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 1/4 cups of gumdrops
Powdered sugar
Cherry juice
