Day 31 Recipe 31 Southern Queen of Vegan Cuisine:
First of all Mrs. Deen, I will not be mincing ham into any type of butter, vegan or cow. I do not care what they do in Kentucky. I am not spreading it on any biscuit. I did find some vegan ham though that I will politely layer onto a nice fluffy biscuit. (Spoiler alert: I no longer enjoy the taste of ham or the texture of deli meat.)
Vegan Ham Biscuits Recipe
2 cups whole wheat white flour
1/3 cup raw sugar
3 teaspoon baking powder
1 teaspoon salt
1 cup non-dairy milk
6 tablespoons margarine, very cold, I prefer Earth Balance
2 slice vegan ham, warm
Directions:
Preheat oven to 450 degrees F.
In a large bowl, whisk together flour, raw sugar, baking powder, and salt.
Stir in non dairy milk. Once the milk is absorbed, add 5 tablespoons of vegan margarine in small chunks.
Fold biscuit dough until vegan margarine is well distributed, but do not over work the dough.
Work quickly, you do not want the margarine to begin to melt.
Place dough on a baking sheet by the spoon full and bake for 7 - 12 minutes until golden brown.
Layer on the vegan ham slices.
Serve with jelly and syrup.

Betty's Home-Cured Country Ham Biscuits
Betty demonstrates how to assemble Kentucky Country Ham Biscuits. This is not really a recipe, just a guide to putting together a traditional entrée on the Kentucky dinner table.
Home-Cured Country Ham Biscuits
6 center-cut slices country ham, cooked and thin-sliced (If you can't find country ham, you may use regular cooked, thin-sliced ham.)
about a dozen 2-inch Light and Airy Cream Cheese Biscuits (You will find the recipe for these in Betty's Kitchen, or you may use any type of biscuit you like.)
Trim all fat from the center-cut slices of country ham. Use a 2-inch biscuit cutter to cut rounds of country ham from the center-cut slices, expecting to get about 4 rounds per slice. Place two rounds on hot, baked biscuits, which have been neatly sliced horizontally. Arrange on a nice plate and serve immediately. (These may also be served cold. Just refrigerate until ready to serve.) Enjoy! --Betty

COUNTRY HAM BISCUITS & RED VELVET CINNAMON ROLLS! | WEEKEND HAPPENINGS
Hey family!! In today's video we make some country ham & bacon biscuits for one breakfast, and then we head out to set up at the church we are playing at the next morning. Later that night I make some red velvet cinnamon rolls that don't go exactly as planned... ????
Buttermilk Biscuit Recipe:
2 cups all purpose flour
1/4 tsp baking soda
1 TB baking powder
1 tsp salt
6 TB unsalted butter (cold)
1 cup buttermilk
Directions:
Preheat oven to 350°
Combine all ingredients and mix by hand, using a little flour to keep it from sticking to your hands too much. Pinch of pieces a little bigger than a golf ball and roll into ball shape. Pat in extra flour and press slightly onto baking pan.
Bake in preheated oven for 10-15 minutes, until bottoms of biscuits are browned. Brown the tops and spread with butter!
I don't want y'all to be disappointed with that red velvet cinnamon roll recipe so here's a different one that is great! ????????????

Homemade Cinnamon Rolls Recipe:
Dough:
First Bowl:
1/4 cup warm water
1 package active dry yeast
1 tsp sugar
Mix these together and put to the side.
Next, in a small pot mix:
3/4 cup milk
1/3 cup butter
1/3 cup sugar
1/2 tsp salt
heat on medium/low until butter has melted and the mixture is just warm. If it gets too hot let it cool down to warm before mixing with other ingredients.
In a large bowl add 2 cups of all-purpose flour. Add the milk mixture and the yeast mixture. Begin mixing and add in two eggs. Add more flour 1/2 a cup at a time until the dough is formed and pulling from the sides of the bowl.
Remove from bowl and knead dough for a few minutes. Spray bowl with cooking spray and add dough back in. Cover with a dry towel and let rise for one hour.
Filling:
1/2 cup softened butter
1 cup brown sugar
2 TB cinnamon
Mix brown sugar and cinnamon in a small bowl.
When dough is finished with first rise roll out on a floured surface. Shape into a 13 X 15 rectangle. Spread softened butter on top, then sprinkle on the brown sugar and cinnamon mixture. Roll the dough beginning on the longer side. Cut into 16 rolls. Place in a greased pan, cover, and let rise 30-60 minutes.
Bake at 350 for 20-25 minutres.
Icing:
3/4 cup powdered sugar
1-3 TB heavy cream
Mix in a small bowl. If it's too thick add a little more cream.
Pour over cooled rolls.

Country Ham Biscuits and Scallion-Pimento Cheese

Ingredients
Scallion-Pimento Cheese:
Two 7-ounce bricks sharp white Cheddar, finely grated
Two 4-ounce jars pimentos, drained and diced
1/2 cup mayonnaise
1/4 cup chopped scallions
Country Ham Biscuits:
2 cups all-purpose flour, plus more for dusting
1 tablespoon baking powder
1/4 teaspoon kosher salt
4 tablespoons unsalted butter, cut into cubes and chilled, plus 1 tablespoon for the skillet
3/4 cup buttermilk, well shaken
1/4 cup finely diced country ham
Directions
Special equipment: a 2-inch biscuit cutter
Preheat the oven to 450 degrees. Place a 10-inch cast-iron skillet in the oven to heat.
For the scallion-pimento cheese: Stir together the cheese, pimentos, mayonnaise and scallions in a large bowl. Set aside, or if making ahead, place in the fridge until ready to use.
For the country ham biscuits: Mix the flour, baking powder and salt in a bowl. Using a pastry blender or 2 table knives, cut the cold butter cubes into the flour until it resembles coarse meal. Use a fork to stir in the buttermilk to make a soft dough that comes together and leaves the sides of the bowl (make sure all the flour is worked in). Stir in the ham. Turn the dough out onto a lightly floured board and knead 3 or 4 times until smooth and manageable.
With your hands or a floured rolling pin, flatten the dough to a thickness of 1/2 inch. Cut the dough out with a 2-inch floured biscuit cutter.
Remove the skillet from the oven and melt the remaining 1 tablespoon butter in it. Place the biscuits in the skillet. Bake until lightly browned, 10 to 12 minutes.
To serve: Split the biscuits and serve with a generous spread of pimento cheese.

Buttermilk Biscuits, with Country Ham and Red-Eye Gravy

Buttermilk Biscuits
(Makes about 10)
2 1/2 cups White Lilly self-rising flour (or 2 1/2 cups cake flour, 3 teaspoons baking powder, 1 teaspoon salt) plus more for dusting
1-2 teaspoons sugar (1 will just enhance browning, 2 you'll start to taste)
1 stick salted butter (or unsalted plus 1/4 teaspoon salt), FROZEN SOLID
1 cup buttermilk, cold
Melted butter to brush the tops
Pre-heat oven to 475 F. Measure out the flour and sugar into a mixing bowl. Grate the frozen butter with the big holes on a box grater, toss the butter in with the flour, and put the bowl in the freezer for 15 minutes. Barely mix in the buttermilk, and turn the resulting disaster out onto a well-floured surface. Mold it into a big lump, flour the surface, and roll it out to an inch thick. Flour the surface, fold it over on itself, and roll it out again. Repeat for a total of four folds and roll it out to an inch a final time. Punch the biscuits out with a sharp circular cutter (or you can just cut them into squares with a knife). Remember the biscuits you make from the trimmings won't be as good. Put the biscuits on a parchment-lined baking sheet, brush them with melted butter, and bake until puffy and golden, about 15 minutes.
Biscuits with Country Ham and Red-Eye Gravy
If you like your ham crispy like I do, take 2-4 biscuit-cut slices per person and put them into a cold, dry pan. Turn the heat on medium and let the fat slowly melt out of the slices, then brown the slices a bit in their own fat. Take them out of the pan a little before they're as crispy as you want them, because they'll harden as they cool.
Deglaze the pan with black coffee, and turn the heat off. After the sauce has stopped boiling, mix in a healthy amount of the sweetener of your choice — I like honey — and melt in half a tablespoon of cold butter.
Split a biscuit in half, put the ham on the bottom half, drizzle with red-eye gravy, and layer on the top half.
