SPINACH BALLS – KETO APPETIZER 1G NET CARBS
These keto spinach balls are the best appetizer with such delicious flavors and textures. The recipe is also gluten-free so all everyone can enjoy them!
WHAT’S A SPINACH BALL?
This is a very popular appetizer for Thanksgiving or Christmas, but you can enjoy them whenever! All it is is a ball filled with grated cheese, eggs, and spinach. The original recipe uses panko breadcrumbs as a binder, bit the keto version does not.
Of course, I will be sharing both recipes with you guys here today! The keto version uses a healthier, low-carb almond flour and psyllium husk.
SPINACH BALLS
PREP: 15 MINS COOK: 30 MINS TOTAL: 45 MINS
YIELD: 22 BALLS
INGREDIENTS
KETO SPINACH BALLS RECIPE
6 cups Fresh Spinach Leaves trimmed, washed (230 g) makes 2/3 cup packed cooked spinach
3 large Egg beaten
1 cup Grated Mozzarella or a combo of parmesan and mozzarella
1/4 cup chopped fresh parsley or herb of your choice (optional but flavorsome!)
1 teaspoon Garlic powder
1 teaspoon salt
1 cup Almond Flour
2 tablespoons Whole Psyllium Husk
ORIGINAL RECIPE
6 cups Fresh Spinach Leaves trimmed, washed makes 2/3 cup (160g) packed cooked spinach
3 large Egg beaten
1/2 cup Grated Mozzarella or a combo of parmesan and mozzarella
1/4 cup chopped parsley or fresh herb of your choice (optional but recommended!)
1 teaspoon Garlic powder
1 teaspoon salt
1 cup gluten free panko crumbs
INSTRUCTIONS
1. Preheat the oven to 370°F (200°C).
2. Trim and wash the fresh spinach leaves.
3. Place the leaves in a large mixing bowl and cover with boiling water. Cover the bowl with a lid and set aside for 3 minutes.
4. Rinse the spinach with cold tap water. Drain and using your hands squeeze all the remaining water. (You should measure 2/3 cup (160 g) of packed cooked spinach leaves. If you are using frozen spinach, defrost, and measure this quantity.)
5. Place on a chopping board and finely chop the cooked spinach. Transfer into a mixing bowl.
6. Add beaten eggs, grated cheese, fresh herbs, salt, garlic powder, almond flour, and psyllium husk (or panko gluten-free crumbs if you are making the original recipe). You can also add salt and pepper if your cheese is not very salty. I didn't add any salt.
7. Combine with a spoon until it forms a batter from which you are able to form balls.
If too moist, add slightly more almond flour or crumbs until easy to roll as ball with your hands.
8. Place the balls on a non-stick cookie tray covered with parchment paper leaving a half-thumb between each bite. You should be able to make 22 spinach balls, one ball is about 1 tablespoon of batter (I made 30).
9. Bake at 370°F (200°C) for 20-30 minutes or until golden on the top.
10. Serve immediately with dips like sugar-free tomato sauce, guacamole, mustard, or tzatziki.
11. Enjoy!
NOTES
- Spinach: Fresh or frozen, both will work well. Always measure spinach once cooked, drained, and chopped for precision. 6 cups of fresh spinach makes about 2/3 cup of cooked, squeezed, and packed spinach.
- Grated mozzarella: Any hard grated cheese would work, but mozzarella creates the most impressive cheesy effect.
- Whole psyllium husk: Husk is 100% fiber, it gives a chewy texture to the balls and holds the ingredients together. DON’T USE Metamucil powder. It’s a husk, but it’s not good for baking unless you want it to be dry or turn purple / blue.
- Fresh herbs: This is optional, but recommended to boost the flavor. The best herbs are parsley, cilantro, dill, basil, or a combination.
- Garlic salt: I used garlic, but no salt.
HOW TO FREEZE AND MAKE AHEAD YOUR APPETIZER?
These are perfect appetizers to make ahead for any get together.
1. Lay the balls, uncooked, on a plate covered with parchment paper.
2. After an hour, transfer into an airtight container
3. Keep in the freezer for up to 3 months.
HOW TO DEFROST THEM?
You don’t have to defrost these balls in a microwave. Place the frozen balls onto a baking tray covered with baking paper. Bake at 200C (370F) for 20-30 minutes or until golden.

These SPINACH BITES are my favorite holiday appetizer! They are easy to make, can be prepped ahead of time, freeze well, and are a hit with both adults and kids. When you're ready to serve, just pop them in the oven and serve warm with our simple creamy dipping sauce.
Ingredients:
2 sticks butter, melted
2 lbs frozen chopped spinach, thawed and drained
6 eggs
1 1/2 cups grated parmesean
1 Tbsp instant minced onion
couple dashes nutmeg
3 cups herb seasoned stuffing mix
Bake at 350 degrees for 20 minutes or until golden brown.
Dip:
1/2 cup mayonaise
1 tsp sugar
1 Tbsp lemon juice
a few dashes hot sauce
1 tsp mustard (preferably dijon)
1/4 cup sour cream
