How To make Herbed Tricolor Pasta Salad
1 1/2 c plain yogurt
3/4 c mayonnaise
1 1/2 tbsps white wine vinegar
or to taste
3/4 c minced fresh parsley
1 lg red onion :
quartered and sliced
3/4 c finely chopped fresh herbs -- basil, dill, etc.
1 1/2 lbs tricolor pasta
In a large bowl whisk together yogurt, mayonnaise, vinegar, parsley, onion and herbs. Cook pasta until tender, about 12 minutes. Drain pasta and rinse with cold water. Drain and toss with dresssing and salt and pepper to taste. Salad may be made 4 hours ahead and chilled, covered. If pasta absorbs dressing while standing, toss with about 3 tbsp warm water.

Ingredients:
1 (12 oz) package rainbow pasta
1/2 head fresh cauliflower, cut into florets
1/2 head fresh broccoli, cut into florets
1/2 red onion, cut into 1/2 “ chunks
1 cup of 1/2” chunks cheddar cheese
1 cup pepperoni slices, halved
1 (6 oz) can black olives, drained
3/4 cup Italian dressing

Sauce ingredients...
- 1/2 lb ground Beef
- 1-2 springs of Green Onion
- 3-4 Mushrooms
- 2 Tomatoes
- 1/2 of a Zucchini
- Handful of Spinach
- 2 cloves Garlic
- 1-2 springs of fresh Thyme or 1/2 tsp dried
- 1-2 springs of fresh Rosemary or 1/2 tsp dried
- 1/2 tsp Oregano
- 1 tbsp Olive Oil
- Salt & Pepper
Thinly slice all the vegetables. On a hot pan with a drizzle of Olive Oil sauté Onion and crushed Garlic for a couple of minutes. Add Tomatoes to the pan, season with Salt, Pepper, and herbs, and cook until Tomatoes are tender. Crate a well in the middle of the pan and cook ground Beef for about a minute and a half. Toss the Mushroom and Zucchini slices into the pan and cook for another couple of minutes.
In a boiling pot of water add Pasta, Salt, and Olive Oil, and cook Pasta a minute less than the instructions on packaging. Drain Pasta and bring to the pan with sauce immediately. Mix in Spinach leaves, and Olive oil and serve with your favorite cheese sprinkled on top.

Ingredients:
-Grilled Chicken.
-Pasta cooked and cooled.
-Juice of 1 lemon.
-3 tablespoons of Olive Oil.
-1 tablespoon of Salt and pepper each.
-Grated shallot.
-2 cloves of garlic, pressed.
-1 jalapeno - minced.
-1.5 cup of shredded carrots.
Prep:
-Make dressing, by combining Oil, lemon juice, salt and pepper, shallot and garlic.
-Add the carrots and jalapeno to the pasta.
-Mix everything with the dressing.
-Top with Grilled Chicken.
-Enjoy!

Sunflower Seed Pasta Salad (with Chicken)
Delicious and easy pasta salad.
Dressing:
1/2 cup mayo
1/4 cup Ranch dressing
2 tsp red wine vinegar
3 tbsp milk
1 tbsp minced dry onion (or use a couple of tbsp of minced fresh onion)
1/4 tsp mustard
1/4 tsp garlic powder
1/4 tsp parsley (or 1 tbsp fresh, finely chopped)
1/4 tsp pepper
1/2 tsp salt (to taste)
Main part of salad
1 cup of uncooked pasta, cooked drained and rinsed in cold water, drain
3/4 cup broccoli florets
1/2 cup cubed cheese
1/4 cup chopped celery
1/4 cup chopped cucumber
1/4 cup finely chopped carrot
1/4 cup shelled sunflower seeds (I used the salted kind because that's all I could find)
Add or remove any veggie that you would like in this
1 cup diced cooked chicken (optional)
2 boiled eggs chopped (optional)
