How To make Hobo Bread (Fruitcake)
Combine: 2 c Raisins
4 ts Baking soda
Add 2 c. boiling water Let stand overnight. In morning add: 1/4 c Oil
2 Beaten eggs
1/2 ts Salt
1 1/2 c Sugar
4 c Flour
1 ts Vanilla
Fruit-see directions Mix well and bake in 2 loaf pans or 3 - 1 lbs. coffee tins, greased and floured. Bake at 350 for 1 hr. For fruit cake I add: 2 cup chopped maraschino cherries, 2 c. chopped dates, 2 cups chopped pecans. This addition to the Hobo Bread will make 4 - 1 lb. coffee tins.

My version of fruitcake. I received the recipe from a lady over 25 years ago for Hobo Bread and added my favorie fruit, nuts, etc for a fruit cake. Anyone that has told me they hate fruitcake, wants this recipe. It's very moist. Enjoy. :

Baking Soda/Powder vs ENO (How to Replace?)
This video will solve the most common confusion about the difference between Baking Soda, Baking Powder and Eno. The Chef has explained the difference between them and also which is to be used where in baking. Baking Soda is used for instant baking while baking soda is used in bakery items where a long time baking is done. Baking powder gives better rise compared to baking soda when heated for a long time. Baking soda requires an acidic medium such as lemon, yogurt, buttermilk etc to activate while baking powder already included acid so it works with water.
Eno is an alternative to both baking soda and baking powder. Eno is basically combination of baking soda with acid which allows it to work without the need of any acidic medium. Therefore Eno is very much like a baking powder. I love the basic recipe with nothing added. The cream cheese frosting makes it much richer and sweeter. The chopped nuts really add a nice flavor, and the cranberries change both the flavor and texture. Bake in muffin pans for an excellent breakfast muffin. This would be the perfect end to a Sunday dinner. If you are looking for something different to take to your next church dinner or potluck you have found it.

Options:
½ cup Chopped Nuts
1 cup Coconut
Cranberries or Raisins
Bake in an 9x13 pan or 24 muffins
