How To make Hot Cowboy Beans
2 pounds dried pinto beans
1/2 pound salt pork, slashed into a fan shape
1/2 to 1 pound leftover ham, hamhock, or
bacon 2 medium onions
coarsely chopped
2 to 3 jalapenos, canned or fresh seeded :
finely
choppe d 1 to 3 fresh green chilies -- seeded and chopped
1 tablespoon worcestershire sauce
1/2 (3 oz.) bottle of chili powder
salt to taste
Pick over beans for rocks; wash and soak overnight. Next morning, cook in soaking water. Add remaining ingredients and enough fresh water to cover the beans by about 2 inhces. Bring to boil, then reduce heat and simmer. For 3 days stir and inhale the marvelous aroma from time to time. Turn fire off at night. Keep covered at all times. Watch water; you may have to add a little as you go along. Of course you can eat these beans the first day, but here's the way the cowboys did it: They ate a few the first day. Let them cool at night. Cooked them the next day and them again. By the third day they were rubbing their bellies and saying they sure as hell wished they'd waited, 'cause the beans was just getting' good.

RECIPE:
INGREDIENTS:
15.5 oz. package Hurst's BBQ Style Cowboy Beans (save the seasoning packet for later in the recipe)
16 oz. hickory smoked bacon, sliced, cooked and drained
2 jalapenos sliced
1 yellow onion diced
2 garlic cloves minced
6 cups chicken broth
SLOW COOKER SIZE:
6-quart or larger
INSTRUCTIONS:
Place the beans in the colander. Sort through the beans with your hands, discard any debris. Rinse the beans.
Add the beans to the slow cooker.
Add the bacon, jalapeno, onion, garlic and chicken broth. Wait to add the barbecue sauce and seasoning mix.
Place the lid on the slow cooker. Cook on high for 6 hours without opening the lid during the cooking time.
Add the barbecue sauce and seasoning packet. Stir.
Serve and enjoy!

Thank y’all for stopping by! Don’t you hate it when someone serves you beans right our of the can?! Now I’m not against canned at all, but you got to give them a little more love to make it good. We’re showing you our recipe for cowboy baked beans using chili beans and pork and beans for the base along with some chipotle peppers to spice it up. Stick around for this classic baked bean recipe.

Cowboy Baked Beans
Makes about 10- 12 servings.
6 slices, thick cut bacon
1 (26 oz) can Ranch Style or Chili Beans
1 (28 oz) can Pork ‘n Beans
1 (7 oz.) can chipotle peppers in adobo sauce, chopped
1 medium yellow onion, chopped
1 – 1 ½ tablespoons yellow mustard
1 ½ - 2 cups light brown sugar
1/2-1 cup BBQ sauce
1. Cut the bacon into 1-inch pieces. Add to a skillet and cook over medium-high heat until about ¾ done. Set aside.
2. Using a colander, drain the juices from the beans. Add to a 12-inch Dutch oven.
3. Stir in the chipotle peppers, to taste. Stir in the onion, mustard and brown sugar and BBQ. Adjust taste, if needed.
4. Cook over coals until the mixture reaches a boil, let simmer a few additional minutes and the mixture thickens just slightly. Serve warm with a slotted spoon.
Note: If cooking in the house use an 11x13-inch casserole dish. Cook at 350 degrees F. for about 30 – 40 minutes.
