This simple but superb dish is a favourite of adults and children alike and, done right, can be prepared and consigned to the oven in next to no time.
Ingredients: 1 kg boiled potatoes, sliced // 4 hard-boiled eggs, sliced // 200 g bacon, cut into strips // 1 smoked Hungarian paprika sausage, sliced // 5-6 dl sour cream // salt, pepper // shredded cheese
Layer the ingredients in a buttered baking pan so that the potatoes are at the bottom. Cover with sour cream. Layer with sausage, eggs, and bacon, as desired, each time topping with more potatoes and sour cream and seasoning with salt and pepper. Cover the top in shredded cheese.
Bake at 200˚C for one hour. Serve hot. The casserole can be plated with additional sour cream or, for an excellent accompaniment, served with pickles such as the Hungarian yeast-fermented variety.
Tip: Because potato casserole is particularly susceptible to drying out, be sure to be generous with the sour cream, possibly adding a few spoonsful of melted fat to ensure the right degree of juiciness.

Placek po Wegiersku, crispy, golden brown potato pancake with nice beef stew - served with sour cream and some green onions. This dish brings a lot of memories because it was our favourite during our honeymoon in Zakopane. The version we had was Placek po Zbojnicku but it is very close and made my husband very happy :)

Ingredients:
For the stew:
600 g of stew beef
2 red bell peppers
2 garlic cloves
half an medium onion
all spice
bay leaf
1 tbs of sweet paprica
some chilli flakes
1/4 cup of flour
1/4 cup of tomato paste
1/2 cup of white wine
1 cup of beef stock
salt and pepper
oil for frying
For the pancakes:
600 g of potatoes
1 egg
1/4 cup of flour
small onion
oil for frying
sour cream and chopped green onions for serving
Instructions:
Chop the onion finely and then slice your garlic cloves. Cut your meat in to 1 cm (1/2 inch) cubes and the bell peppers in to bite size pieces.
Transfer the meat in to a mixing bowl and add flour. Mix until all pieces of meat are fully coated with flour.
On a large skillet heat up few tbs of oil and then add sliced garlic. Wait until garlic starts to sizzle before adding chopped onion. Sauté for about 5 minutes, until softened.
Using slotted spoon remove onion from the pan leaving the oil. Transfer the onion in to a medium saucepan.
Add bell pepper to the frying pan with the reserved oil and cook for about 5 to 7 minutes, until softened.
Transfer the bell pepper to the saucepan with the onion and add your meat to the frying pan. Add more oil if needed. Sprinkle the meat with a paprica and brown very well.
Transfer browned meat to the onion and bell pepper and add wine and beef stock. Stir and add bay leaf, chilli and all spice. Cover and cook on medium low heat for about 30 minutes, stirring occasionally.
After 30 minutes add tomato paste and cook for additional 20 minutes or until the meat is tender.
Check for seasoning.
Peal off your potatoes and onion and chop very roughly. Into your food processor add potatoes and onion and process until smooth. Add egg, flour, salt and pepper and process it for additional 30 seconds.
On a large frying pan heat some oil and fry your pancakes (make them round, around 15 cm in diameter) few minutes on each side, until golden brown.
Spoon the stew on one half of a pancake and fold the pancake in half. Spoon some sour cream on top and garnish with chopped green onions.

1.Dough
90ml (6 tbsp) Milk
1g (1/8 tsp) Salt
150g (1 cup) All-purpose flour/wheat flour
15ml (1 tbsp) Unsalted butter
2.Fillings
2 (200 g) Potatoes
15g (2 tbsp) Bacon crumbs
6g (1 tbsp) Chopped onion
15ml (1 tbsp) Moyonnaise
Mozzarella cheese
???? Important tips
1. About 200 grams of potatoes, you can use 2 small potatoes or 1 large one.
2. Omit the bacon if you don't have it.
3. Heat on medium-low heat and cook for about 3-5 minutes on each side.
4. No need to knead the dough, refrigerate the dough for 30 minutes or more, you can refrigerate it overnight and make it the next day.
