Cast Iron Impossible Pie (for Pi Day)
March 14th -- 3/14 -- is Pi Day, which means it's time for pie! This particular week has been one of the most impossible weeks the United States of America has seen in a long time. Because of this, we're making an impossible pie for Pi Day. It's also called crazy pie, which is also very appropriate for this past week. But the reason why they call this an impossible pie is because it's incredibly easy to make: we don't have to prepare a separate crust. All we do is pour the batter into the greased pie pan, and bake it in the oven. As it bakes, the pie will form its own crust on the bottom, and also on the top. And the result, of course, is delicious. The recipe for this pie can be seen at:

Ingredientes:
- 4 huevos
- 2 tazas de leche (regular, descremada o vegetal)
- 1 cucharadita de vainilla
- ¾ taza de azúcar
- ½ taza de harina sin preparar

This goes back to my university days and t was an almost weekly dish

Impossibly Easy Vegetable Pie
Ingredients
2c chopped broccoli 1/3c chopped onion 1/3c chopped green pepper
1c /4oz shredded Cheddar cheese 1/2 c Bisquick mix 1 c milk
1/2 tsp salt 1/4 tsp pepper 2 eggs
Directions
1 Heat oven to 400°F. Grease 9-inch pie plate. Heat 1 inch salted water to boiling in medium saucepan. Add broccoli; cover and heat to boiling. Cook about 5 minutes or until almost tender; drain thoroughly. Stir together cooked broccoli, onion, bell pepper and cheese in pie plate.
2 Stir remaining ingredients until blended. Pour into pie plate.
3 Bake 35 to 45 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes.

470g milk
110g coconut
4 eggs
1 t vanilla extract
60g flour
160g melted butter
150g sugar
juice and zest of one large lemon..

Recipe for home made biscuit mix:
Small Amount:
1 c all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 Tbs Butter
Mix thoroughly.
Large amount
6 cups all purpose flour
3 Tbs baking powder
1 1/2 tsp salt
6 Tbs butter
Blueberry Cranberry Impossible pie recipe:
1/2 c biscuit mix
3/4 c sugar
4 eggs
2c. milk
1c blueberries
1/2 c dried cranberries
Mix all ingredients. Bake in 400 degree oven for 30 minutes.
