FRY BREAD & Navajo TACOS | HARD TIMES -- recipes from times of food scarcity
It's said that fry bread was invented in the 1860s by the Navajo when the were forced to relocate by the United States government and given rations of flour, sugar, salt and lard. I had my first frybread taco when I lived in Montana, and today I'm recreating it so I can have it in Rhode Island, too. New videos every Thursday and Saturday!

NAVAJO TACOS RECIPE (*adapted from House of Nash Eats:
Indian Fry Bread
2 cups flour
2 1/2 tsp. baking powder
1 tsp. salt
1 cup warm water
Taco mix
1 tbsp. oil
1/2 yllow onion diced
1 lb. ground beef
1/4 cup taco seasoning mix
1 15 oz. can dark red kidney beans - drained and rinsed
1 14.5 oz can petite diced tomatoes
1 4 oz. can diced green chilies
4-8 tbsp vegetable oil (to use for frying the bread, use as needed)
Toppings (to your preference)
We used:
Sour cream
Diced Tomatoes
Shredded lettuce
Sliced black olives
Pico de gallo
Fry bread instructions: In a large bowl, combine the flour, baking powder and salt. Add the warm water and mix using a fork until a dough forms. Turn the dough out onto a lightly floured surface and knead for 5 minutes, then transfer to a clean bowl and cover tightly in plastic wrap. Let the dough rest for 10 minutes.
Divide the dough into 8 equal sections by pinching off golf-ball sized balls of dough, then pat and roll out the dough balls into roughly 6-inch discs on a lightly floured surface. Keep them covered with plastic wrap while you prepare to fry them.
To fry the bread, set griddle to medium heat. Pour 3-4 tbsp. oil. Once hot (a wisp of white smoke will let you know it's ready), place the fry bread in the oil. Continue to cook until the bottom is golden brown. Once to desired color, flip and cook the second side to the same color. Continue for all fry bread.
*We cooked the meat before the fry bread.
Bring griddle to med/low, and cook ground beef in 1 tbsp. of oil, chopping and cooking until browned and in very small pieces (ground beef for tacos). Once browned, pour in the taco seasoning mix, and continue cooking an additional 3-4 minutes until the meat is properly seasoned.
In a large skillet, heat 1 tbsp. oil over medium-low heat, then add the onions and cook for 2-3 minutes, just until they begin to soften.
Add kidney beans, tomatoes, and chilies, and decrease the heat to low. Add in the ground beef, and stir everything together, continuing to let simmer. Use to top Indian fry bread for Navajo tacos. Pile the meat high, and top with your favorite toppings, enjoy!
