I believe Chicken Francaise, also known as Francese, was created in America by Italian immigrants. As with numerous Italian chicken dishes, they were originally intended for veal but taste equally as good with chicken. But back to the name, why an American Italian dish is called “French”, maybe it’s because of all the butter, maybe the wine, but one thing for sure, the flavours are superb! Enjoy it with a rich and dry white wine such as Sauvignon Blanc or Chardonnay, or even a light red such as Gamay or Pinot Noir. Crispy Chicken Recipe | Chef Sanjyot Keer
Written recipe for Crispy chicken
Prep time: 15 mins
Cooking time: 30 mins
Serves: 6
For frying chicken
Ingredients:
• Chicken 250 gm (boneless)
• Vinegar 1 tsp
• Salt & black pepper to taste
• Egg white 1 no.
• Corn starch 2 tbsp
• For batter:
1. Refined flour ½ cup
2. Corn starch ½ cup
3. Salt & pepper to taste
4. Oil 1 tbsp
5. Water as required
• Oil for frying
Methods:
• Slice the boneless chicken in thin strips, you can use any part of the chicken meat which is boneless, if your using chicken breast, then slice and divide the breast in two halves and further slice it into thin strips.
• Transfer the chicken strips in a mixing bowl, further add vinegar, salt & black pepper, egg white and cornstarch, mix and coat the chicken well.
• To make batter, take a separate mixing bowl and add refined flour, corn starch, Salt & black pepper to taste and oil, mix well and further add water as required to make a semi thick batter, add the marinated chicken strips and coat it well with the batter.
• Set a wok filled with oil, on medium high heat, deep fry the chicken strips until crisp & golden brown. remove it on an absorbent paper and keep aside for later use.
For making chicken crispy
Ingredients:
• Oil 2 tbsp
• Garlic 12-15 cloves (chopped)
• Spring onion bulbs 4-5 / 1/3rd cup (chopped)
• Spring onion greens 1/4th cup
• Capsicum 1 medium size (juliennes)
• Sugar 1 tsp
• Schezwan sauce 1/4th cup
• Ketchup 1/4th cup
• Red chilli sauce 1 tbsp
• Soy sauce 1 tsp
• Cornstarch 2 tbsp + water 100 ml
• Spring onion greens 2 tbsp (chopped)
Methods:
• Set a pan on high heat, add oil, garlic, spring onion bulbs and spring onion greens, sauté it for a minute.
• Add capsicum and sugar, continue to sauté it for a minute on high flame.
• Add schezwan sauce, ketchup, red chilli sauce, soy sauce and salt & black pepper to taste, mix well and sauté it for a minute.
• Add cornstarch and water mixture to the pan and cook until the sauce thickens.
• Now add the crispy fried chicken strips and sauté well by coating it with the sauce, toss it well for a minute and add spring onion greens, your crispy chicken is ready to be served, serve this lip-smacking appetizer hot and crispy.

today's recipe is perfect KFC style Fried Chicken recipe in a homemade version. I hope u guys will like this easy and delicious chicken fry recipe...
Here is what you'll need!
chicken pieces with skin - 500 g
salt - 1/4 tsp
soya sauce - 1/2 tblsp
tomato ketchup - 1 tblsp
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Black pepper powder - 1 tsp
instant noodles masala (like Maggi) - 1 pack
IT's optional but it will help to increase the taste...plz try with it.
for coating:
All purpose flour - 1.5 cups
corn flour - 1/4 cup
salt - 1/2 tsp
Garlic powder - 1/2 tsp
Chilli powder - 1/2 tblsp
turmeric powder - 1/4 tsp, for nice golden color but its optional

CHICKEN MALAI HANDI | MURGH MALAI HANDI | CREAMY CHICKEN RECIPE

Ingredients for Chicken Malai Handi:
(Tsp - teaspoon; Tbsp - tablespoon)
- Boneless Chicken thighs - 500 gms (cut into 2” pieces)
For Marination:
- Salt- 1 tsp
- White Pepper Powder- 1 tsp
Onion-Cashew Paste:
- Onion, sliced- 2 medium (130 gms)
- Cashew nuts- 12 nos
- Green Chillies, cut- 3
Whole Spices:
- Green Cardamom- 5
- Cloves-5
- Black Peppercorns- 12
Spice Powders:
- White Pepper Powder- 1/2 tsp
- Coriander Powder- 1 tsp
- Cumin Powder- 1 tsp
- Garam Masala Powder- 3/4 tsp
- Nutmeg Powder (Jaiphal)- 1/4 tsp
Other Ingredients :
- Ginger Garlic paste- 2 tsp
- Whisked Curd/Yogurt- 3 tbsp curd whisked with 3 tbsp water
- Fresh Cream- 4 tbsp
- Oil- 3 tbsp
- Butter (optional)- 1 tbsp
- Kasuri Methi (Dry Fenugreek Leaves), roasted & powdered- 2 tsp
Preparation:
- Clean and cut the boneless thighs into 2” pieces.
- Grind the white peppercorns or use readymade white pepper powder.
- Grate the Nutmeg (Jaiphal) into a powder.
- Marinate the chicken pieces with salt & white pepper powder. Mix and set aside for 30 mins.
- For the Onion/Cashew Paste, slice 2 medium onions (130 gms), cut 3 green chillies (Serrano Peppers) into halves and take around 12 whole cashew nuts.
- Now heat 1.5 tbsp oil in a pan and add the sliced onions. Fry on medium heat for 3 mins till the onions are translucent and then add the cashews and the green chillies. Mix and fry for another 2 mins and then set it aside on a plate to cool.
- Once cooled, add these into a blender and first coarse grind. Add 3 tbsp water and blend it into a smooth paste.
- For the Yogurt mix, whisk 3 tbsp of Curd or Plain Yogurt and add 3 tbsp water. Whisk again & set aside for use later.
Process:
- Heat oil in a wok or kadai and add the whole spices.
- Once it splutters, reduce heat to low and add the ginger garlic paste. Give a mix and fry on low heat for around 2 mins.
- Now add the Onion-Cashew paste made earlier and fry on medium heat for 5 mins till the color starts changing.
- Add the marinated chicken pieces and mix & fry on high heat for 4-5 mins till the chicken pieces are light brown.
- Now add all the spice powders other than Kasuri Methi, give a mix and fry on medium heat for 3-4 mins.
- Lower the heat and add the yogurt-water mix. Cook on low heat for around 3 mins till oil separates.
- Add 100 ml water, give a mix and cover & cook on low heat for 15 mins till the chicken pieces are tender.
- Remove the lid and add the fresh cream. Give a mix and add another 50 ml water.
- Cover and cook on low heat for another 5 mins till oil separates.
- Remove the lid and add 1 tbsp butter (optional) and dry roasted & powdered Kasuri Methi (Fenugreek leaves).
- Mix and simmer on low heat for 2 mins.
- Serve with roti or naan.
