How To make Israeli Sweet and Spiced Chicken
1 tablespoon Plus 1 ts- vegetable oil
1 Chicken (3lbs)
cut into 8 or
12 pieces and skinned
2 cups Thinly sliced onions
1 cup Orange juice (no sugar added
2 tablespoons Honey
1 teaspoon Salt
1 teaspoon Paprika
1/2 teaspoon Ginger
1/2 teaspoon Ground nutmeg
8 each Large pitted black olives
(sliced or whole) 1 tablespoon Water
2 teaspoons Cornstarch
2 small Oranges,peeled & sectioned
(or 1 cup canned mandarin :
orange sections,no-s
Preheat oven to 350oF. In 10-inch non-stick skillet heat oil; in batches, brown chicken pieces on all sides. Over bottom of shallow 3-quart casserole spread onion slices; top onions with chicken pieces. In 2-cup measure or bowl combine juice, honey, and seasonings; pour mixture evenly over chicken and top chicken with olives. Cover casserole and bake until chicken is tender, about 45 minutes. Transfer chicken and olive to serving platter and keep warm. Scrape onions and pan juices into 1-quart saucepan and bring to a boil. In small cup combine water and cornstarch, stirring to dissolve cornstarch; stir into onion mixture. Reduce heat and simmer, stirring constantly, until mixture thickens; pour over chicken. Serve garnished with orange sections.

Turkish chicken kebabs / skewers or a.k.a tavuk şiş in Turkey.
It is said that the method of cooking meat on skewers over open fire originated on the steppes of Central Asia where the Turkic people originate. This basic concept was refined over time and was brought to the world with the westward migration of Turkic people.
There are different versions of chicken skewers / kebabs and this one is with a marinade made with Turkish yogurt, onion juice, garlic and spices that turns the chicken thighs into succulent, flavorful kebabs.

Chicken thigh mince 1kg (1000g)
Onion 1 medium
Red bell pepper 1 medium (150g-170g)
Parsley or Coriander chopped 1 cup
Salt 3/4 tbsp or to taste
Chilli flakes 1 tbsp
Paprika powder 1 tbsp
Green chilli paste 1 tbsp OPTIONAL (use fresh)
Garlic paste 1 tbsp (use fresh)
Oil 2-3 tbsp
For Salad:
Red Onion 1 large thinly chopped in slices
Tomato 1 large
Parsley or Coriander 1 cup
Sumac powder 1 tbsp (substitute of sumac powder is Pomegranate powder or fresh Lemon juice)
Salt 1 pinch
Cooking Time 15 -20 mins
Cooking Time on charcoal grill is 8 -10 mins
DO NOT OVER COOK THE KEBAB, KEEP THEM JUICY
This quantity makes 10-12 medium size kebabs.Kebab should be 10 inches long.

✅ Chicken
Chicken thighs, boneless skinless | 500 Grams
Lemon | 1 Piece
Garlic cloves | 2 Pieces
Coriander powder | 2 Grams
Cumin powder | 2 Grams
Paprika powder | 2 Grams
Chilli powder | 2 Grams
Salt | 1 Tsp
Black pepper | 1 Tsp
Olive oil | 2 Tbsp
✅ Couscous
Shallots | 1 Piece
Carrot | 1 Piece
Zucchini small | 1 Piece
Cherry tomatoes | 150 Grams
Water | 350 ML
Chicken stock cube | 1 Pieces
Olive oil | 2 Tbsp
Salt | 1 Tsp
Couscous | 150 Grams
✅ Saffron yogurt
Saffron (infused) | 20 ML
Natural yogurt | 170 Grams
Salt | 1 Tsp
???? Step by step instructions:
1️⃣ Roast chicken
Preheat the oven to 220°C/200°C fan. Wash the lemon and grate its zest with a fine blade, taking care to avoid its bitter white pith. Peel and crush the garlic. Add the garlic, 1/1.5/2 tsp of the grated lemon zest, 2/3/4 Tbsp of lemon juice, the coriander, cumin, paprika, chilli (spicy!), salt and pepper and a drizzle of oil to a baking dish and mix well. Add the chicken and toss until coated. Roast for 30 min or until cooked through.

2️⃣ Prep couscous
Meanwhile, peel and finely dice the shallots and carrot. Finely dice the zucchini. Rinse the cherry tomatoes. Boil the measured water and dissolve the stock cube in it.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
3️⃣ Make sauce
In a bowl, combine the natural yogurt and the infused saffron. Season with a pinch of salt. Mix well and set aside.

4️⃣ Start couscous
Heat a saucepan over a medium heat with a drizzle of oil. Add the shallots, carrot and zucchini with a pinch of salt and cook for 5 min. Add the cherry tomatoes and fry for 1-2 min further.

5️⃣ Finish couscous
Add the couscous and the stock. Bring to a boil, then turn the heat off. Cover with a lid and set aside for 5 min or until all the liquid is absorbed and the couscous is tender.

6️⃣ Serve
Slice the roasted chicken. Divide the vegetable couscous among plates and top with the chicken slices. Serve with a dollop of saffron yogurt.

For the vegetable stir fry:
* 2 tablespoons of butter
* 1 small onion (chopped)
* 3-4 cloves of garlic(minced)
* 2 scotch bonnet pepper(chopped)
* 2 carrots
* 1 green bell pepper
* 1 red bell pepper
* Seasoned vegetable stir fry with:
* ½ teaspoon each of salt, chicken bouillon and pepper
* Slurry:
* 1 tablespoon of cornstarch
