How To make It's a Snap!
2 Egg whites; room temp
1/8 ts Cream of tartar
1/2 c Sugar
1 ts Vanilla
1/2 ts Ginger
1/2 ts Cinnamon
2 Gingersnap cookies; crushed
Preheat oven to 250 F . Grease cookie sheets. Beat egg whites in mixer bowl at medium speed until frothy. Add cream of tartar, beat until soft peaks form. Add sugar, 2 tablesspoons at a time, beating 30 seconds after each addition. At high speed, beat until stiff, 1 minutes more. Beat in vanilla, ginger and cinnamon. GENTLY fold in cookie crumbs. Drop by teaspoonsful onto prepared cookie sheet. Bake 45 minutes until dry to the touch. Turn off oven, let meringues cool in oven, 2 hours.Makes 20 cookies. -----

100g Plain Flour
40g Demerara Sugar
2 Tablespoon Golden Syrup
3 Teaspoons Ground Ginger
50g Unsalted Butter
1/2 teaspoon Baking Powder
1/2 teaspoon Bicarb of soda

Made It’s a snap Cheesecake with Knox gelatine- easy cheesecake -mom & daughter cooking channel
IT'S-A-SNAP CHEESECAKE
Makes 8 servings
1/2 cup sugar
1 env. (0.25 oz.) KNOX® Unflavored Gelatine
1 cup boiling water
2 pkg. (8 oz. each) PHILADELPHIA
Cream Cheese, softened
1 tsp. vanilla
1 ready-to-use graham cracker crumb crust (6 oz.)
COMBINE sugar and gelatine in medium bowl. Add boillap walar stir 5 min. or until gelatine is completely dissolved.
BEAT cream cheese and vanilla in large bowl with mixer until biended.
Graduallv beat in gelatine mixture. Refrigerate 45 min. or until thickened , stirring every 15 min. Pour into crust.
REFRIGERATE 3 hours or until firm.

This week we have another Harry Potter Butterbeer recipe served as a magical twist on a classic dessert - Brandy Snaps!
Things are starting to wind down at Privet Drive in Chapter Two of the Prisoner of Azkaban - 'Aunt Marge's Big Mistake' when we see: Uncle Vernon brought out a bottle of brandy
We tackled a Brandy Cocktail for Uncle Vernon back in the Philosopher's Stone so this time I wanted to try and serve it up as a dessert (because you can never have enough sweet treats at a dinner party)!
Although Brandy Snaps have Brandy in the name, there isn't actually any Brandy inside (shh! Don't tell Vernon!) Instead, they're a deliciously crisp shell that is packed full of caramel flavours - just like Butterbeer! I wanted to take the Buttbeer element of these homemade brandy snaps one step further so have also infused the freshly whipped cream with butterscotch sauce too!
