Every day I get so many emails and comments asking why you can’t locate the music I use or find it using Shazam. I purchase music licenses for almost all the music you hear in my videos. Healthy VEGETABLE LASAGNA - COPYCAT OLIVE GARDEN'S | Recipes.net
If you are feeling a little extra and thinking of preparing a healthier lasagna serving, this Vegetable Lasagna just like Olive Garden is perfect for you! This lasagna dish is packed with various layers of tender vegetables and a salty, herbed cheese mix for added umami.

Ingredients:
1 lb lasagna sheets, preferably the assemble and bake variety
7 oz goat cheese
⅓ cup black olives, pitted, sliced
1 tbsp dried thyme
2 tsp dried basil
1 tsp dried oregano
2 tbsp garlic, minced
4 cups marinara sauce
2 zucchinis, (roughly 14 ounces total), medium, sliced ¼-inch thick
½ lb squash, thinly sliced
½ lb bell peppers, of your choice
¼ cup parmesan cheese, grated or powdered
salt and ground black pepper, to taste
To Taste:
parsley, or torn basil leaves, chopped
1 tsp parmesan cheese, per serving
⬇️ How to make Copycat Olive Garden’s Vegetable Lasagna ⬇️
0:12 Preheat the oven to 375 degrees F.
0:15 Combine the goat cheese, olives, garlic, and all the dried herbs. Mix until evenly incorporated.
0:41 Season with salt and pepper to taste. Adjust accordingly and set aside.
0:54 Next, assemble the lasagna by spreading 1 cup of marinara sauce at the bottom of a 9-inch baking casserole.
1:05 Add a layer of lasagna (use additional sheets as necessary to cover any empty spaces), followed by the vegetables (zucchini, squash, and bell peppers).
1:37 Add roughly 2 tablespoons of goat cheese and spread to cover. Repeat as necessary, finishing with the pasta and marinara sauce.
2:13 Sprinkle the top with parmesan cheese then cover it with foil before transferring to the oven. Bake for roughly 60 minutes.
2:30 Once done, remove the foil and discard. Broil the top for roughly 5 minutes until golden brown.
2:34 Allow the lasagna to rest slightly before serving family-style or portioned according to your preference.
2:38 Garnish with parmesan cheese and serve.

Recipe For Lasagna With Ricotta Cheese, Mozzarella and Parmesan with homemade meat sauce.
Our easy recipe for making lasagna with layers of homemade meat sauce and noodles, layered with a ricotta, mozzarella and parmesan blend, and then topped with more parm! This recipe is so good, it’s the kind of lasagna you dream about and this homemade lasagna is easy enough for weeknight dinners, it’s perfect for making ahead or and it’s one of my favorites for making two and sharing one with a friend.
Recipe For Lasagna With Ricotta Cheese, Mozzarella & Parmesan
2 lb ground beef
1 tablespoon tomato paste
28 oz whole peeled tomatoes
1 tsp garlic powder
1 tsp onion powder
1 tsp kosher salt
1 tsp ground black pepper
1/2 tsp dried oregano
1/2 tsp dried basil
16 oz ricotta cheese
16 oz mozzarella cheese, grated
1 cup parmesan, grated
1 box lasagna noodles
Recipe For Lasagna With Ricotta Cheese, Mozzarella and Parmesan Directions
Homemade Meat Sauce
Brown the ground beef, and drain off any extra fat. Add 1 tablespoon tomato paste, and cook for 1 - 2 minutes. Add the tomatoes, crushing large tomatoes, and stir. Add the spices, stir and simmer for 1 - 2 hours.
Ricotta Cheese Mixture
Mix together the ricotta, mozzarella and 1/2 cup of parmesan.
Cook the lasagna noodles according to package directions. Remove from water, and let cool laying flat in a single layer on a clean kitchen towel.
Assemble the lasagna in layers. Top with the reserved grated parmesan cheese. Cover with foil and bake in 350 degree preheated oven for 45 minutes. Remove the foil, and return the dish to the oven. Cook for another 15 minutes to brown the cheese on top.
Let sit for 15 -20 minutes before serving.
91 year old Maria shares her lasagna recipe with Pasta Grannies!
Maria passed away on 12 December 2021 aged 92; this video was made in 2020. She made this lasagna for her customers to take away. Over the years she adapted the recipe and the result is a green lasagna, layered with a pork ragù and béchamel sauce. This is Maria's second appearance for Pasta Grannies!
Adjusted to feed 4 -6 people:
For the pasta:
● 250 g 00/plain flour
● 110 g eggs
● 30 g fresh spinach, leaves only
For the ragù:
● 2 garlic cloves
● 3 sage leaves (wrapped in muslin)
● 200g unsmoked pancetta, diced
● 1.5 kg minced pork (loin or shoulder)
● 1.5 litre beef stock
1 heaping tbsp of tomato paste
400 g passata
● Salt, pepper
For the béchamel:
● 30 g butter
● 30 g flour
● 1/2 litre whole milk
● 1/2 a nutmeg, grated
● For sprinkling: 50g Parmigiano (or more, if you feel like it)
